Number 8? If you start with a perfect circle, you can sort of stretch it out to make as big an oval as you need.

This is the only round roof specific video I have currently, but I do reroof a lot during the #sahmhelplive streams and have posted a handful of shorts. If there's a build or shape you're struggling with in particular, the next build help stream is actually in 2.5 hours and I'd love to take a look :)

I have oddly angled seated windows and wonder what other roofing manipulation I could do. I could not get the little side arrows on the circular roof to work. Not the ones that do length or width but the other angled arrows would not work when I tried to manipulate the circular roof putting a gabled roof together with it. Hmmm... I do know the round roofs haven't been working well since the Horse Ranch pack release. They said they fixed it now, but time will tell. If you are on Discord, I think the best advice I can give you would be to join the server (linked in all the recent video descriptions if it isn't in this one) and post a screenshot of the room from above in the build help channel. Otherwise, you could check out the video I did on octagon roofs, which also works with weird angles, or just use a diagonal half hipped pitched down quite low and "tucked in" to the rest of the roof. That often works for odd diagonal rooms (the video looks like it's on a diagonal).
