So if you want to season a Chinese wok in Chinese style, you will need pork fat and Chinese chives, if you can't get Chinese Chives you can use green onion instead!
1. first you want to wash your wok with soup, scrub it hard! Clean it!
2. heat up your wok, burn it hard till your wok colour start to change from steel , to blue than silver. Becareful not to burn off the handle, if you see smoke coming out from the wooden handle than you should stop!
3. Let your wok cool down, than wash it with soup again, and this will be your last time cleaning your wok with soup!
4. After cleaning, heat up you wok again, at high heat, scrub your wok with Chinese chives or green onions! Until the chives turn black!
5. After that, wash your wok with warm water, this time you don't want to use dish soup, as I said, no more soup!
6. Heat up your wok, now is time to season your wok with pork fat, scrub your wok with the fat, rub hard, let the fat oil gets into your wok! If is smoky, turn your heat down to low, rub it for like 3 minutes, you want to get oil all round your wok!
7. clean your wok with warm water, and repeat step six for one more time!
8. finally, wipe some oil on the outside of the wok as well, heat it up, when you see smoke coming out of your wok, your done! Congratulations, now you can cook like a Chinese chef lol!
So remember to clean your wok with warm or hot water every time you finish cooking, never use soup otherwise you will damage the season!
So you don't have a brush like the one I use in video! You can try and use the one in the toilet! lol! na... I'm just joking here!
For the brush, you should be able to get one in your local asian market store, if they sell wok and other kitchen ware, they will normally have it as well! Some use bamboo brush to clean their wok so you might can get one as well!
