good sharpening techniqe with the stone block, stay safe. use a block of wood the size of your hand and fix the block to it by some sort of strong glue. to avoid cutting your self. place the knife on an angle and lean the back of the knife on a bench top to support the knife while maintaining a steady angle and swipe go along the knife in one strike in the same direction never come backwards as your angle will not be the same.. practice a lot you will get good at it. I also use the back of any ceramic plates or cups when I cant find a sharpner around. it works too. usually the bottom of a cup or tiles, sandstone rocks works or even concrete.

"How To Sharpen A Fillet Knife"......we're 5 minutes into a 9 1/2 minute video before he even mentions sharpening. Then he drags out that wretched gadget that every housewife loves, the one that makes a serrated blade out of a good knife by making microscopic nicks in it. It was at this point I paused the video...........just couldn't take any more.

Nothing in this specifies the difference in sharpening a fillet knife, compared to other styles. Also has a lot of miss-information. Avoid this video, watch one from a knife collector, or somebody who knows more about knives.

I still have one of those plastic Rapala SS filet knives...its difficult to sharpen properly. People have told me it can't be sharpened on a stone (blade flexes too much). They recommend a professional sharpening machine.

Why should children no touch them? 50 years ago most children carried a knife in their pocket everywhere they went and used knives for all types of things. Somehow,knives must have gotten a lot more dangerous I suppose. There's nothing wrong with a child that knows how to use a knife to actually use one. It's a tool not a bomb.

You are sharpening the wrong way for a start. You don't pull the stone away from the blade or the blade away from the stone. You push into the stone

B careful running the nice knife thru the cheapo sharpener u will ruin ur desired edge angle !! Yes that is a honing rod but for beginners I understand what u meant it's a sharpening tool so cut the guy some slack this sharpening 101 not graduate level sharpening !!! I'm no knife guru but I do own about 100 and have a slight obsession with seeing just how sharp they can be and thru experience I have found that using multiple stones with increasing grits (#s wise) is the way to create a dangerously sharp edge ... Thank u for not including electric fillet knives they r a lazy mans version I don't care if u fillet 1000 a day pro fish mongers clean more fish and laugh at electric knives !!! Rapala makes the best fillet knife for the money! Once sharpened and stropped, don't touch the blade! My father could fillet a 40 inch Hallibut in one pass! His Ling Cod technique was just a fine! A friend of mine wanted to show me how to sharpen a knife! Till I handed him my Rapala! He ran his thumb down the blade to feel if it was sharp, but before I could warn him of it's sharpness! I took the knife and told him he has just cut himself, and he laughed, up to the time, I grabbed his thumb and applied pressure and a compress bandage! He said he didn't feel it! I then told him he has never handled a "SHARP" knife in his life! I use an Arkansas stone and a diamond steel... Three strokes on each side if it is good shape, and away I go! Dad taught us well, and how to handle knives and other weapons, which my Rapala is one!

This guys not the best to take advise from really.Using stones with decreasing roughness will obviosly sharpen a knife better and leather at the end to hone blade.All well and good but as a commercial fisherman that isnt pratical and dont have the time.A rub on a proper whetstone not the crap he got there then hone with a steel is all you need to fillet a fish we are not trying to cut paper.I never understood that paper cutting bullshit anyhow,or when they run it up forearm to shave hair on arm..wtf.There are tools for that jobs,this is fish filleting.Stone then steel if you are on the job.If you got plenty time and the equipment then various stones and leather for razor sharpness.

If you're good enough with a steel, They do sharpen knives, I dull the fuck out of my knife, all the time, and bring it back sharp enough to shave in about 3-5 minutes on a steele.

In my opinion an 11" or 12" long knife is the Best Filet knife. I feel that those 6 to 7 inch ones are just toys. Try Fileting a Halibut or King Salmon with a toy knife.

You apparently don't know much about sharpening knives. Your stone doesn't tell you what angle your edge will be. You knife tells that then you adjust the stone to that angle of you don't want to,screw your edge up.
