Where about do you merge the hems from the sides of the dress or more towards the back ? Thankyou for your video

I think toward the back makes sense because you don't want the sides to be too long (and therefore a tripping hazard) but I would highly suggest pinning the length FIRST to make sure it looks nice on the dress overall!

Where do you start the slope to the train when shortening the dress? At the side seam? Then how drastic is the slope?

This depends entirely on your dress and the train because each dress will be different. It is a good idea to start sloping from the side seam, so that you have good food clearance (so you don't trip on longer sides!) and then make the slope gradual to blend in nicely with the rest of the train.
