The problem is usually that steep runs are so icy that a hockey stop will result in just sliding sideways with no grip and just gaining speed. Edging more will make you wipe out, edging less will make you pick up speed. Carving the turn from the top will gain you a lot of speed and mostly your ski's are not up to the task to take the vertical speed out in the bottom part of the turn. I've yet to see someone explain how to safely secure your speed on a steep icy pitch. Most people just barge down the slope picking up lots of speed, but they would not be able to stop. Like the girls in Hintertux ( and that was even on a red icy slope ), one of them even died to a tree because they could not stop.

On icy & steep terrain, try skidding the top of your turn or skidding the entire turn, use the turn shape to control your speed rather than relying on edging.
