Where did you buy this exact heat deflector? All I can find are metal ones and ceramic ones that have all sides open. I like that this one only keeps one side open for smoke.

I always worry about letting the BBQ get too hot, and then today, I lost patience after almost 2 hours and moved the chicken directly over the charcoal just to get the internal temp up to 160. Turned out really nice, though.

does the skin get rubbery when you cook it at such low temps? what about smoking it at 350, and being done after 80mins or so?

I turned my Weber Grill into a PIZZA OVEN. HOW? Easy! I was doing Kitchen counter tops in 18" Porcelain Tile. Had some left over. I just took a full size tile and Mark inside of the grate, and cut it out round. Where it would fit inside my Webber. With a 1/2" diamond hole saw bit, drill out 9 holes around it. This will let heat come up the top from the sides. The trick is, Take the grate turn it upside down where the handles are down. Then take the tile and set it on top of the grate. NOW YOU GOT A PIZZA OVEN 👍😎🍕🍕🍕🍕

Looks great will give it a try once i pick up my Weber. Just with the charcoal i see you have lit some and put a heap not burnt. The smoke that will release while lighting isn’t that bad? Thanks

Natural lump charcoal is fine, if doesn't have any additives. Never use briquettes that are soaked with lighter fluid - but with natural lump you are all good!

You can do the same with briquettes, as mentioned without lighter fluid. As long as there is proper air flow, you are good. If you were to dump a bunch of unlit coals on top and started to choke the coals, then there would be an issue.

Going to try this today! I'm also really surprised this only has 36k views. The production quality is really good, although the voice track is a bit quiet compared to the music, but that's trivial. The rub looks very good as well. Excited to try this, and it's awesome that it only takes 90 mins or so to cook!
