Thank you for using the Eye. I smoked one years ago on the old Brinkman water smoker. And even though I injected the Eye with French onion soup juice, I screwed up and didn't pull it until it was around 135 degrees. Even rested, it still came out too tough, but the flavor was fantastic. We made a couple of well-dressed sandwiches and the rest for chili and tasted great. In other words, next time I do it, I will pull it at 120 ! And the potatoes look excellent!

Excellent work. You need a meat slicer. Thinly shaven roast beef with provolone cheese. You already have the dipping sauce. BTW, received my care package of 2 jars of Uncle Steve's sauce. The Screaming Sasquatch should be interesting. He can thank you for the business. All the best. JT

Tommy I've been waiting since yesterday to watch this, and you didn't disappoint! That whole meal is perfection, I grew up with my pops making roast beef, so this has a special place for me. As for the rub, my local hardware store has Mason jars of all sizes. That's what I keep my blends in, can pick them up cheap!
