Thank for the video. I am just got this for a smoking completion in a few weeks. Do you know why it can’t keep temp around 250. I kept on having to close the slide as the temperate kept rising to over 300. Any ideas what I have been doing wrong ?

Is there no system check that the lid is open? When I open I hear the fan going and when I close it the temperature can spike. You got any tip on that? I also like to know where you put your temperature sensor in de masterbuilt to know the real temp.

I made this two years ago when you posted the vid. Loved it. Felt like doing it again Christmas Eve this year and once again it did not disappoint. So good. Only thing you’re missing in the ingredients is a nice frosty beer in hand while you smoke it. For me thats mandatory.

Wow! We did this for our Christmas Eve supper tonight. Absolutely amazing ! I did it on my Masterbuilt XT The flavor and cook was perfection. Your review of the XT definitely influenced my decision to pull the trigger and get one. So far I am not disappointed. Great pit/grill. I’m still learning it, but I am very happy so far. I lived in Texas for many years and I’m a little embarrassed for taking advice from a Jersey boy about BBQ. You have some great ideas and I truly appreciate your inspiration. Keep rolling smoke!

Sweetness pairs very well with pork(and chicken) which is also why he chose cherry pellets. Beef you want more of the meat taste which is usually why people only put salt n pepper and will use hickory or oak to smoke

@vwp11962 you've never heard of maple glazed ham? Honey baked ham? I prefer Applewood over cherry with pork but both add sweetness where hickory oak even pecan give it less sweetness.

Usually I'm allabout hellmans over dukes, but for a tiger sauce like that you are absolutely right! The hellmans over rides the inglehoffers horseradish too much.
