Hey, just watched your video review of this unit also, and I really appreciate all the info! Turns out we bought our Masterbuilt 7 years ago, when we moved to our current home, and never have used it! Finally said, either we use it, or toss it! Unfortunately, we had also lost the manual, and I guess they have taken the manual for our particular model number off line... the good news is, it is very much like yours, and we found the manual for the new model. So, we got it figured out... (I think the only real difference is the shape of the water pan.) Anyway, this tutorial helped a lot! Our first shot at smoking was 3 racks of ribs for the family coming over tomorrow, so this was perfect, just enough info. We cut them in half as you recommended, and they all fit... Your review "after using it for a while" video was also helpful, because we will need to clean it up tomorrow! By the way, we did the 3-2-1 method without the "1". Decided to wait till tomorrow when the clan gets here to finish them, and I think we are fine because we checked the internal temp of all the ribs at between 190 and 200 degrees already after step 2... they are still in the foil, and we're gonna leave them in that, in the fridge over night... Tomorrow we will just sauce them and smoke them for an hour before the family gets here. We'll see how that works, but I am curious what you recommend for that kind of situation... that is, smoking the day before, what do you recommend to do to warm them up? Would you have gone ahead with the third step before sticking them in the fridge over night?

I would completely prepare them and then refrigerate them tightly-covered. I’d add a little more sauce, wrap tightly and foil and heat in the oven slowly before serving.

@@IrixGuy Thanks!! I am/was hoping we didn't screw up by leaving them wrapped overnight. We used a honey and brown sugar coating in the foil. And by the way, I don't know your history yet, but I love the boat adventure scenes at the beginning... we just finished the Great Loop last year. The adventure of a lifetime...

Finally got my dead Masterbuilt working. I bought a third party programmable temperature controller and probe, wired it into the heating element relay, and bypassing the dead masterbuilt controller. New life for my 30" smoker and only about $85 in parts. Used an Auber’s Smoker Controller, Dual Probes 1800 Watts Controller

A new masterbuilt is like $225, you’re obviously a thrifty dude. Nice. I blew at least $100 on buying a water pan and grease drip tray and legs for mine. Thought about how I could’ve just purchased a brand new smoker… nah, better to reuse things

I'm glad you had this video posted, I picked up a free one-off Facebook marketplace and I'm cleaning the internals and I'm going to re season the inside with a load of hickory chips and I found your video very helpful for the operation as there was no manual that came with the unit, you made it just that much easier for me.

Great video, thanks. Question: In step 3, I had my temp at 220 and could not get my rib internal temp over 170, even after an estra hour. Not sure why. I used the top shelf, could that be a reason? Everything else went well.

There is a situation with smoking known as “the stall.” You likely encountered that and just needed to wait longer.

Thanks for the thought, but I waited 2 extra hours and the temp never got over 170. I checked it with2 different thermometers. Does the top rack make a difference? The ribs were good, but definitely not fall off the bone.@@IrixGuy

I just got one of those smokers and im going to try this recipe. Do i leave the vent on top of the smoker open, closed, or part way??

Hello Mr. IrixGuy. I've tried to contact the Masterbuilt factory to help me with my smoker issue. But they say they cannot help me because I am no longer under warranty. Could you or another reader/watcher please advise me? My smoker is about 6-7 years old. Everytime I went to smoke something this summer, it would turn on and receive my programming, but then within about 30 seconds, the breaker would blow that was associated with the outlet outside I was using. Same thing happened no matter which outlet or extension cord I used. Nothing else was plugged into that breaker zone either. What do you recommend I do? THANKS!

Wow, that smoker lived a long life! Honestly I’d be happy that it lived so long and pick up another electric smoker. The one like I use is inexpensive and I love it!

I have to plug mine up to a 20 amp plug circuit. If I use the 15 amp outside one, it will trip it.

That sounds fancy and expensive! In all seriousness, generic store brand yellow mustard is all that I use but it’s only functioning as a binder to adhere the seasoning to the pork but while it smokes :) #ChefIrixGuy

I did it in the oven. I had them in for 3.5hrs and it only got to 170. I then did low broil for about 15 min.. I’m hoping it gets to 225

Mine will get much hotter than 225 if I’m not careful (once it’s set initially, it does a phenomenal job maintaining the temp). #Masterbuilt #ChefIrixGuy

I'm a retired Mechanical designer and wrote SOP's and WIP's, the first thing I told everybody was, Don't state the obvious. You'll lose your viewers when you speak down to them. I'm going to watch your videos again and offer examples, I couldn't watch much because I couldn't learn anything from what I was watching.

You're right. Mustard function as a binder, so a minimal amount is fine if it's enough to stick the seasoning to the meat.

Why would you expect that Dawson. He explained how he cooked his ribs, and even included a recipe for the pineapple apple butter marinade. If you want to know how the smoker works, you can always look up the owner’s manual. It’s online
