Make sure to keep temp around 275° to 300°, too low and they will come out rubbery. Beginners mistake with smoking , not all meat is low and slow. I learned the hard way 😁

I love these and have smoked them in the past. What about those tendons though? They kind of turn me off when I chew on them. I wonder if pressure cooking first would soften them up and help the meat fall off.

@@TaylorsFSCooking man I just circled back and watched this again because I've been thinking of trying a copy-cat "Turkey Leg Hut" inspired cook where it IS supposed to fall off the bone. It looks like it's just a matter of leaving them in the foil longer, but it's good to know how to produce both. Good stuff!

For brining any salt will do i use kosher most times, with a little curing salt for color. As far as rub just use your favorite ad long as it's low sodium. They will be plenty salty from the brine

I sometimes have a problem with smoking my chicken at 275 it makes the skin rubbery. Do you keep the temp at 275 the entire 3 hours ?

Yea..I tried today and it didn't turn out good. 😔😔. I think my temp was too high. It was a lil under of 300 for 4 hours. They were hard and dry.
