How to Spatchcock a Chicken

Here's how to remove the backbone and flatten a chicken before grilling or roasting (aka butterflying, aka spatchcocking). The advantages are many: shorter cooking time, lots of skin exposed to the heat for browning and crisping, and easy carving. In this video I also show you how to level up and remove the keel bone, too.

One day I may try this with a chicken. I've done it a couple of times with turkey and it works great.

Should not be difficult as their bone structure should be quite similar to turkeys, just smaller in size and probably easier to do due to being smaller.
