So I get turning to look upstream after your bow has pointed downstream as your body will follow but isn't looking upstream during the first part of the spin the opposite of this?

Great question and observation. You are right, but the hull shape of most boats will naturally turn downstream irrespective of our effort. Having the head facing upstream sets the body up in its best alignment for correct edging. Have a go at looking downstream the entire time you're in a hole and see how much less stable you are. So, I suppose in answer to your question, you are absolutely correct to say that it doesn't necessarily help the spin, but it most certainly keeps you dry side up!
