He has THE perfect balance of giving background info and practical tips for the matter at hand. His delivery is incredibly soothing, but lively. I don’t have enough praise for Lucas. Every other on-screen cooking personality on KZbin should be studying this.

Yes, everything about this presentation is excellent. Even the slight background music. So many cooking videos have a distracting background. This low level background sound works for me on a cooking show.

I'm going through a slow binge of Lucas videos and I can't believe I get to watch these videos for free. It's not just about the quality communication and knowledge for me - as a diaspora Asian with HK immigrant parents I never felt super connected to my heritage, but seeing someone on screen explaining the techniques that my mum taught me to use and (also in other videos) explaining why she prepares food the way she does provides so much of that unspoken context I just don't know about and it's refreshing to feel this validation. Hope to see many more videos with Lucas in the future!

Even as a white guy, without the heritage aspect...Chinese cooking is so deep and so very different from western styles that it is absolutely wonderful to pick up the techniques and flavors! It really opens a whole new world of experiences. He just explains things so well it can make you feel nostalgia for a life you've never even lived.

China has such a long and ancient history with thousands of years of refining cooking techniques and flavors from different regions and ethnic groups. I'm glad Lucas is able to introduce even just a little bit of that.

Tried Lucas' technique this evening with kale. Kept it simple, no egg drop just single aromatic (ginger) and equal pinches salt/sugar/msg. Literally said "wow" when I tasted it. Incredibly tasty. The sugar and msg add dimensions beyond just using salt, and the ginger was surprising in how well it came through This literally has changed how I'll now braise greens.

@@wongilank msg is just a quicker way versus slow boiling a pot of deep chicken broth that needs hours of boiling. typically restaurants use this chicken broth to give the dish umami instead of msg

absolutely love Lucas especially when he breaks down the basics and compares restaurant techniques vs more accessible home cooking techniques. it's so nice to watch him cook food which I've grown up eating but have never learned to cook. also love the comments section of all Lucas videos, pure love and support for this man and his buttery voice.

Lucas is a personality that needs his own show. This video should be a staple for anyone who only makes salads to get their leafy greens. Asian culture knows what’s up when it comes to veggies, Western culture, not so much.

I love the way you provide foundational knowledge and frameworks that are DIFFERENT from western cooking. This is an important point to begin with because otherwise the lens that westerners use to understand Chinese cooking is off. And, they don’t even realize they are using a framework that is western rather than accurate to Chinese cooking.

I love yam leaves. My mom just boils them and we eat them with tomatoes and fish sauce and some plain white rice. I've used them in pasta in place of spinach, and you can't even tell the difference.

Every video with Lucas Sin is a dang master class. I always learn some fascinating esoteric info, not to mention authentic and practical tips for his style of cooking. I'm so grateful for his explanations and his methods for adapting the techniques to a Western home kitchen. Another commenter mentioned they would watch anything with Lucas in it. Second!

I grew up with stir-fried greens, but I'm here for Lucas Sin -- just love the way he demonstrates cooking and talks about food. Yam leaves are delicious, and so are pea shoots!

I think I’ve mistaken MSG with Szechuan Peppercorn my entire life. Last night I used the Peppercorn I threw a handful in and was surprised by the “zing” it made my mouth numb, a flavour I’ve always attributed to too much MSG… but there was no MSG. Don’t get me wrong, I love MSG and SP I just realised I don’t need to use that much. Thank you Lucas you have made me a better cook this last year my diet has changed completely… just brilliant. ❤

Growing up, my mom would use dashi powder (HonDashi) instead of MSG and no sugar. Dashi powder has MSG in it, so you get the same effect with a little extra umami. :)
