My snow cone syrup never use to crystalize, but recently I've had some issues with the most recent batch I've made. I did some investigating and found 2 easy solutions.
Ingredients
2 c. granulate white sugar
1 c. water
1 pk cool-aid or flavoring powder of your choice
You can also omit the flavor packet and use real 1 tablespoon extract and 1 tablespoon food coloring.
1 T. lemon juice or 1 T. corn syrup
1/2 Recipe
1 c. white sugar
1/2 c. water
1 tsp. extract of your choice
1 tsp. food coloring
1 tsp. lemon juice

I still remember how my x father in law taught me to make snowcone syrup, like how its done in mexico.He showed me way back in the early 70's.

Maybe that's why it's been crystalizing lately for you. It's because you are using the ninja rather than what you originally used prior. Just a thought?

I only use the Ninja one time for this video. I didn't do it before or after. I notice it's the ones that uses the extract and dye tended to crystallize more. The ones with the packets of flavor are fine. Well they are all fine now because I've added the lemon juice to each syrup.
