After watching 20 other videos of people boiling, ice bath-ing, then squeezing their herbs, this was a cathartic restoration of my faith in chef's better judgement. Thank you.

When our son and daughter werevery young sometimes, after running around outside, they would start to cough especially during autumn and spring when the air would be a little cold. Cold would be in the range of about 15 to 20 degrees daytime temperature in Brisbane, Australia. My wife, who's from Hong Kong used to put a piece of basil,stem and leaves, in a jar filled with peanut oil and leave it stand for a few weeks. (Any cooking oil will do.) When our son or daughter was coughing she would vigorously rub the basil oil behind the ears and at the depression above the solarplexes. They stopped coughing almost immediately. This recipe has been passed down from generation to generation in my wife's family. When I watched your video on storing basil I thought I would share the knowledge for the benefit of parents whose children are prone to the same problem. Thank you, from Brisbane, Australia: may all be healthy and happy!

5.) Remove all the stalks including leaf stalks, pack the leaves and tops DRY into a ziploc bag, draw ALL the air out and freeze it. When you use it, simply break off a chunk and crumble it into the dish. It loses all the texture but retains the flavour. It works very well crumbled onto pasta or pizza. When you grow it, water from the bottom into saucers because you will be packing it as soon as you can after picking and you don't want dirt on the leaves.

Thank you so much!!!! I have a garden in the backyard full of herbs that have been thriving. There is WAY too much basil for me to even hope to use. I was just thinking today of how I could harvest the basil to give as gifts to family during Thanksgiving. I didn't even think of infusing olive oil! I imagine that technique would work well with Rosemary?

Basil doesn't like to be watered from the top. It's better to let it suck up water from a tray. But don't allow the roots to sit in excess water for a long time.

What about washing herbs - and then drying them for immediate use? I don't mean 'drying' herbs in terms of preserving them for future use. When you buy fresh herbs from the supermarket (I know they're not gonna be super fresh, so no snooty remarks about growing your own please!) and the packet says, 'Wash before use' - what's the best way to do this - and then dry the herbs for immediate use - or for use within like 24 hours?
@ScoffTV11 жыл бұрын
Hi. A great way to wash and dry herbs is to put the herbs in a bowl of clean water, or into a clean, water-filled sink. Once the herbs are submerged, stir them before leaving them to soak for a moment. Once the dirt has sunk to the bottom of the bowl, remove the herbs by skimming them up and out of the water. (Pouring the bowl's contents through a straining device will only dump the dirt back onto the herbs.) Lay the herbs out on kitchen roll or a clean tea towel and pat dry. The herbs are now ready to use!

I grow Basil in a Hydroponic table and there is no dirt, and bug free. I also have a filter to pull fresh hepa filtered air to collect dust. I recommend my customers to rinse before use but yeah no dirt very clean and no packing moisture worry. I actually recommend growing herbs hydroponic for this reason.
