Thank you for the very detailed video. I’ll be making Tom Yum Soup soon and had no idea about any of these storing methods. I’ll make sure to use these tips. Quick Tip: I would recommend using a straw to suck all the air out of the freezer bag. Simply close the freezer bag but leave a small opening on the end. Stick the straw in the small opening and close as much as possible. Suck and pull straw out quickly. Close the bag and bam.

Do I need to defrost the frozen kaffir lime leaves before adding them to rice dishes (like the Naem Khao coconut rice dish from Laos)? I cut two fresh leaves into stripes and am feezing it in a zip lock bag, the others are on a parchment paper and a baking tin freezing. I think I am supposed to mix the leaves with the rice, curry paste, cocunut, etc before frying the rice patties to make them crispy. I would think the water from the frozen leaves would make the food prep hard.

Are you using only tender young leaves? How could I use older leaves?

Hello Amy, Older leaves is goo too. It has stronger aroma. I usually use older leaves in soup and curry dishes. The reason is you only need the aroma and you don’t eat them. Younger leaves is good for salads and stir-fry dish because it’s easy to eat. Younger leaves is the one with medium green color. If it’s really young, light green and still very soft, they are not ready to be used. Hope this help! Let me know if you have further questions :) Napa
