I would like to share with you my way of preserving garlic. I peel all garlic then make a brine of salt and water: 1-3 Tablespoons of salt per 32 oz of water. Stir until salt is dissolved. Fill quart jars with garlic and pour brine into the jar and a fermentation lid and let sit at room temperature for one week then place a lid on it and put in the refrigerator. Use garlic as needed. Some garlic may turn blue or green but that is normal. The added benefit is the brine! As you use the garlic you’ll have a lot of brine to take for sickness like a sore throat, and add to soups or stews. Just don’t take more than the level of garlic.

@@chungskfood May I ask you what is the best place to get cooking ingredients and herbs in Seoul and Busan? Especially maesil-cheong. That's the one ingredient I can't find here in the Netherlands. I will be in Korea in 2 months.

Hello. This is a great idea to conserve the garlic, much better than freezing the mashed garlic in one box. I never think of putting in plastic bag and separate it like this. The ice cube shape also good idea. Thank you so much for sharing these tips. I hope you have a great day. 👍👍
