I would love to know the basic science behind this process. Why do avocados create pink dye?

We actually don't know, and havn't been able to find much information on it. The peels had a faded light brown color after they had been cooking for a long time, instead of the dark purplish color they had before. So we assume there must be some natural pinkish color pigments in the peels. This video has a lot of interesting information on the chemistry of color kzbin.info/www/bejne/eaXMfJ6Ap6dgl8k

What can be used for blue dyes?

You should be able to get blue from black beans, but we havn't tried it yet :) You should put uncooked beans in a pot with water and soak overnight. Then strain out the beans and submerge your clothes in the water for around 1 to 2 days.

@@musicannita8756 Oh yea that's true. We also heard that using a bit of vinegar in the water can help fix the color. And secondly, if you iron the clothes after, it should help seal the color so it doesn't wash out.
