Exactly. It is such a refreshing respite in a world in which so many are learning to cook from meal prep services that hand you everything exactly measured with overly detailed (and generally, overly fussy) instructions that do nothing to teach people how to cook or to develop confidence in the kitchen.

And 2) brilliant, the soaking the pasta. Plus, if you’re a beginning cook, OMG this recipe has almost everything you need to know. Few weeks later, she called me in a panic because her sugar snaps had gone bad. "Can I use other things???" I assured her she could (after first deadpanning that the world would in fact end if she so much as tried). A few weeks later, the frantic phone calls were replaced by excited phone calls where she shared how she'd gone off script. Was really sweet to see her gain better confidence as a cook.

One ingredient I'd highly suggest is chipotles in adobo or just a can of "chipotle sauce." I often use it when making vegetarian greens because it really gives you those smokiness vibes you'd normally get from ham or bacon, but is its own amazing flavor as opposed to some lame ass meat substitute. Hi Sohla, just wanted to leave a note that this video really did inspire me to go off script, I was fascinated by the idea of pre-soaking pasta, and made a dinner plate with pasta soaked with vegetable stock and grainy mustard , cooked with bacon fat, miso and spinach. I thought it turned out phenomenal (as did my partner) and I don't even like mustard that much! But you inspired me to be brave, and it paid off. I really appreciate the laid back, roll-with-it approach of your work (here and with Babish).

I let it cook until the liquid is almost gone, finish with parmesan for even more creaminess. For colour and a bit of taste, one can add tomato paste after the pancetta rendered its fat.

Our family has been committed to at least one night of beans a week for the past few months. Sunday I bought some collards that were on sale, so decided to search out recipes that had collards and beans and stumbled upon this. Knowing Solah's consistency for great recipes I tried it and was not disappointed. At all. One thing I appreciate about her is that I often feel validated with what she does. First, I read the ingredients and glanced at the directions on Food 52 the other day, but didn't watch the video. I had dried beans, so I partially cooked them in some chicken stock before adding the greens, then would finish cooking them with the greens. The video started playing while I was cooking, so I let it continue on in the background. When she got to the off, off script and suggested doing exactly what I had done, I may, or may not have punched the air in victory. Also, before the video started, I was chopping the giant piles of collards and realized I was super close to horribly cutting my thumb. I even got a little light headed thinking about how bad it would have been given the force I was using. However, I began to consider that I perhaps had let my imagination get the better of me. Then I heard her kale story and the light headedness returned. A few ways I went off script: used dried beans, partially cooked them, then finished with the greens, added a large onion, after grating the cheese, threw the rind in with the beans n' greens before cooking, added a few splashes of malt vinegar before serving.

Sohla, 1) I LOVE collard greens. THANK YOU for not adding sugar...that is a gross thing that experienced in Long Island. I'm making this tomorrow. 2) Can you make a chicken stock vs chicken broth vs chicken bouillon vs chicken base video? 3) You look SO HAPPY in these Food52 videos, and it makes me happy. :) 4) I love red beans. I wonder if they'd work in this.

I love that Sohla isn't just teaching us a recipe but also how to cook. Like sure, she teaches you a recipe but she also tells you how you can change and adapt it to what works for you but also how you have more options and that once you learn this and remember how to make it, you can just have that knowledge to make so many dishes with different flavor profiles. Like that's teaching you how you can be a chef.

@@jeffreym68 I did this while juicing a lime. The older, expert trauma doc who was taking a shift at immediate care put a clotting bandage on the squirt squirt until it stopped then bandaged with gauze and an outer wrap and told me to keep it dry for ten days. The scar is the tiniest thin thread and my finger healed very well. Because of the location on a finger, stitching complicates healing. The nurses thought I would need stitches but I am so glad I did not need it!

Sohla you are brilliant and SO DELIGHTFUL to watch even when you're making things I know I'll never cook! Your explanations are so clear and memorable that they are helpful long after in relation to something else entirely that uses anything similar using the same principles. You are the best. You always inspire me to get cooking with whatever I have and whatever amount of time I have. This video made me take all my greens and an entire onion I needed to use and make something amazing out if them!!! All I did was saute the entire onion (I chopped it first; I know that may have sounded like I threw it in a pot still whole), and inspired by your example I used a TON more butter than I normally would. Then I added some chicken stock and water and all my chopped up greens (bok choy and kale was what I had to eat up before it died neglected in my fridge), and let it reduce down until the greens were tender and at some point in there I added some pasta I had soaked the whole time and it turned out GREAT! That idea to soak the pasta and toss it all in with the pasta water to cook with the greens is an absolute revelation. How amazing. Thank you so much for always inspiring and educating with so much humor and joy!

I love greens and beans! I make something similar, starting with garlic and pepper flakes in oil, then adding beans and stock. Toss in a ham hock for the last half hour of bean cooking instead of bacon. Pull the meat off the bone, add my greens to pot (usually swiss chard - but escarole if I can find it). Simmer until most of the stock is gone. Will add cheese and pasta next time! And maybe a few anchovy fillets at the start - never thought about it, but sounds like it would add a lot of flavour (love anchovies in pasta sauces).

@@jasminelee3935 I’m not vegetarian, but you’re right, Better Than Bullion is a great product. I’d use allums for flavor and maybe a touch of Braggs Aminos, and vegetable fat for vegan. Mushroom broth (or BTB) would be a lot more flavorful than mushrooms. The texture of mushrooms would be off for me in this dish. Maybe sweet potatoes or winter squash. The beans add plenty of protein. No need to “replace” the meat.
