when i turn my fabric, the stitches seem to get tight or bunched up.

It could be that you have too wide of a seam allowance. Skinny seam allowances are especially important when turning tiny parts like doll fingers. You may also need to notch or clip into the seam allowances so the fabric doesn't bunch up inside the turned part. It's hard to say for sure without knowing what you're turning right side out and fabric you're using. Each fabric has different "turning personalities."

Keep a little sponge and a squirt bottle of water on your bench. I do that for my soldering station.
