Just tried this tonight and it really was amazing. Tossed in garlic with the paste, browned, then added in a bit of Italian sausage that I'd prepped beforehand. Topped with fresh parm and basil. Wow!

I made this last night and yes, it did blow my mind. Absolutely delicious. But a word of caution: turn down the heat before adding the tomato paste; otherwise, it’s splatter city. I would also reduce the oil from three T to two T.

Recipe/Video Notes 1) Bloom 1-2 tsp “spices” (½ tsp pepper flakes,1 tsp fennel seeds) in 3 Tbs (warm, not hot) Olive Oil 2) Brown 6oz tomato paste in spiced oil 3) Stir in starchy water (pasta/bean); start with ½ cup 4) Add ½ tsp salt; more or less depending on how salty your starch water is 5) Add 16oz al dente pasta/ or 3 C cooked beans

I’m not kidding, I was hesitant to try this. I only had these combinations at home and I genuinely surprised myself with how good this was! Of course I used the Cajun seasoning, slap ya mama, a dash of Tony’s, and I did have to add a tad of onion and garlic powder. I will be making this again!!! Thank you for the video!

I think this is my new go-to for a quick homemade sauce. I made it and was blown away how easy and flavorful it was. I also like that it’s very much a foundation for other variations. My one variation when I first made it was, I had several shallots, so I sliced about 5 thinly and caramelized them to almost a jam before adding the spices and going from there. Also, I didn’t have fennel seeds, so I used dried oregano and the Mushroom Umami seasoning from Trader Joe’s, along with the red pepper flakes. Also, it’s a lot easier to store several cans of tomato paste as opposed to the big cans of plum tomatoes! Great recipe!

It would be great to list the times for each step for those who don't know when to add what. I made this last night, and guessed based on experience. It was really easy, and it was inhaled by all. Wasn't up for a traditional Sunday sauce, but this more than made up for it.

I want to try this with an herb infused olive oil. I already made a rosemary and garlic infused olive oil but I think I will make a garlic and basil infused oil today and try this dish. It makes perfect sense in my head and I love the taste that fried tomato paste gives to a dish.

Thanks so much for this video! Just made this for my 6 year old who is leery of anything that looks like an onion in the sauce. Since I could add what I wanted for flavor without anything that looked like a chunk, he ate it and it tasted so good. He loves it! I let him help make it so he felt proud that he made something that he loved.

I'm happy I stumbled onto this channel. I've long been a fan of Christopher. Learning how to make this sauce reminded me of kindergarten for some reason. Maybe it was the teacher like delivery making it all clear. I think I finally learned the secret behind the wonderful pizza I had years ago, up in Grand Marais, out on the pier. Note: need to stock up on fennel.

Just had this... Really needs a good amount of Fresh Parm... But it's great! Would be over the top with Scampi... Will do that next time... Bloom spices in oil. Fry the shrimp in the oil. Take out. Add more oil. Brown the paste and there you go! Fresh Basil on top at the very end. :)

Doesn't every broke teenager or college kid figure this one out? Or was it just me when I was young and broke and it turns out I was just way ahead of the curve? lol I remember doing this tons of times....of course back then I didn't know the difference between Olive oil or Vegetable oil etc so in my recipe it was just water too thin it out with hamburger, onions and using whatever pasta I had on hand. All I knew is that a can of Tomato paste was anywhere from 79 too 99 cents depending if it was on sale (and it always was or it was 2 for 1) whereas pre made sauce was way more then that. lol....ahhh memories.

Anise seeds or star anise comes to mind since they taste similar to fennel seeds. They both have that licorice flavor. If you use star anise, of course you would want to remove them before serving. I would say remove them before you add the pasta.

I would think the beans would be cooked separately as it’s too acidic to cook dry beans in,but then add your cooked beans and as much of their cooking liquid as needed/desired and let them infuse on low for at least 15 min and finish with some fresh herbs. ?dill

I think the reason this works, is tomato paste is kinda raw.. and bitter.. cooking releases the sugars.. adding oil gies it body.. im actually here because i have a soup, tomato and vegetable which is thick and i want to cook rice noodles and not burn them and add sme veggies, coz im sick and dont have the wherewithall to do something fancy want to know tricks. right now im soaking the noodle in the soup.. right or wrong.. today..
