As someone with digestion problems I often work my heel. Do you mind explaining why we wouldn't do heel work here? Thanks!

My reason would be ... the focus of this exercise is to apply your body weight as much as you can tolerate used mainly for opening up and loosening the tendons, joints and all the bones from the heal bones up to the toes. If you apply the same pressure to the heel bone you can possibly create a negative action since many plantar tendons/fascia attach/originate from the heel and you do not want to cause any unnecessary irritation there. If your focus changes to work on the heels for digestive issues you will make slight alterations and would probably not work the same as you would for the ball work exercise in this video. It is not bad to work the heel for digestive issues, I believe using a massage stick or your own hands is a better option since the digestive system works in a specific direction (clock wise) and using a ball might be a little to general ... but if that is what gets you to work on your feet than that is great! I hope that makes sense.
