Thank you my father in law had one and after his passing my husband (his son ) inherited it. My husband passed away three years ago and I was telling my 15 year old grandson how to use it but it didn’t sharpen anything that’s when I thought about going on KZbin and looking for someone who knew how to use a whetstone. Great video! But lot better to soak the stone for 12-24 hrs. Lot more smoother sharping process. I found it to be with any wet stone. Helps sharpen German steal a lot faster.

@@brendanwang106 ----- Agree. The edge under a microscope will show hills and valleys where the coarse grit dragged them. If you can get 400x with a good resolution, you can see that even on a computer controlled factory finish - and most of those are probably 400 grit. To get precise about it, you need the micron size of the crystals in the steel, and the micron size of the abrasive particles - I don't know what those are. Quality of steel (consistency) does make a difference. Kyle in the video is showing a knife with a cleanly set bevel, and for that, tilting it may work, but for even someone with a month or two of practice, that clean bevel may not exist. They do make sets of little plastic angle guides .... Those are also useful since most knife makers (manufacturers) will tell you their factory bevel angles. Generally, it's a good idea not to change those, as they may reflect many tests of sharpness v. durability. For someone just starting out, who may have a cheap knife to practice on, one thing I ran into early on was ... a bent blade. Use all the Sharpie and care and precision you want, you still won't get all of the edge on a bent blade. Always check for a bent blade. If your Sharpie doesn't disappear, it's not your stone, it's a bent blade. The spine can be straight, and the edge can still be bent. Drove me nuts for a day until I realized what was going on.

Hey Weiderfan, I just wanted to take a moment and thank for you such an AWESOME job on this video/topic/tutorial. I've been watching knife sharpening videos for two days straight and they all SUCK! I keep wasting my time watching videos after the next - looking for the one that will teach me enough, so that I will have confidence to do it myself. I am glad I found this one. My search for the PERFECT tutorial is over. You are extremely detailed and you cover almost every aspect of the sharpening process. No other video mentioned how you can get the perfect angle by lowering the blade until there are no shadows; or you are supposed to rock the knife left and right to get the whole bevel (heel to tip) to touch the stone. I like how you used an expensive knife to demonstrate your technique - it shows you have confidence in your abilities. I like how you include the stropping process. I love how you demonstrate how scary sharp it is by cutting single hairs. I don't understand how the other terrible videos get hundred-thousands of views while you get so little; you deserve WAY more. I really appreciate the time and effort you put into this video. Weiderfan I want to reiterate what Jimmy said. Loads of videos on sharpening using a whetstone, none of them are quite so clear! You helped me choose a 1000/6000 stone (I'm waiting for it to arrive), when before I was overwhelmed with choices. Just out of interest, what steel is the blade in the video? I'm hearing a lot about carbon vs stainless and want to know if such a hair-splitting edge can be put on a stainless blade?

This video was incredibly helpful, I tried by watching a video on novice knife sharpening, have it a go sharpening slowly and got nowhere and was about to give up. I tried your way and while I'm sure I accidently increased the angle of the edge, I got my knives a little less than out of the box sharp. Definitely paper cutting sharp

This video really helped me, I’ve watched a countless number of sharpening videos over the years and I always have had trouble, I still struggle with sharpening near the tip where the angle changes and you have to tilt the blade to maintain the angle, sharpening from belly to tip I still have a hard time, would love to see a video on that aspect of sharpening some time. Hope you get Chiharu Sugai’s video at Korin..the Japanese method involves putting two fingers on top of the blade directly over the area you are sharpening, putting pressure, and you feel the burr come up. You hold the knife at about four or five o’clock, tip at 10 or 11, pushing away, only grinding as you push away..pushing down directly under your two fingers on the edge bit you’re working on..since you can feel the edge come up, you move your “pressure fingers” up the blade to create a uniform kaeri or burr.. This is the first method that eliminates any waste of steel at all since you can feel the burr come up..

I've been making knives and blacksmithing for over 20 years as a hobby and fun to do for extra money. Not all wrong but but some vary important things left out which will create Improper edge alignment which is not easy to get back. I lurnd blacksmithing dad and grandpa as did they and on my family crest is a anvil and hammer.

Great video! No matter what I do, I can’t get the knife to slice paper like you do, let alone shave hair. I pay attention to the angle but I can’t get it sharp like that. Do I just keep going on the 1000 grit?

Sandpaper laid on a very flat surface. Scrub your stone around until you've removed the gouges. :-)

Outstanding video! Wish I seen a little earlier. Just trying to get into sharpening knives as I am fed up with dull knives and I'd much rather learn a new skill than pay someone else to do it for me. So, after looking into it a bit and getting nowhere but confused with the whole topic due to so many different videos of people using different stones, grits, technique, etc. I ended up ordering a 1000 grit king whetstone(didn't want to get a more expensive quality stone until am confident with whetstones) and then just a double sided strop with a green honing compound. I now see this video and am really wishing I went with a 5000-6000 grit polishing stone aswell and then no honing compound is needed on strop. Will my 1000 stone with stropping with and without green compound be just as good or should I definitely invest in a polishing stone?

This tutorial rocks! After watching a few others and following their techniques I couldn't get my mini-griptilian to shave a single hair. Now, well my arm is a little more bare than I intended haha. Anyway when I finished on my fine stone I noticed a kind of "choppy" effect on the edge, evenly spaced alternating spots of polished and no polished finishes about a 16th of an inch. Any pointers as to what would cause this? I'm using a King 800/4000 stone. Thanks in advance and keep up the awesome high quality vids! KZbin needs more folks like you.

Thats what I love about natural stones, no soaking. I gravitate towards them because they are a little more convenient for me. I like what you were saying about texture of the bevel after the 1000, nice way of putting it. You do a stropping pyramid much like one would be taught by a straight razor professional. To make a note on what you said about older skills and keeping them alive. When you said that I realized that they haven't really been replaced. They have actually been replaced with sharpening systems and jigs that take the skills out of it, no skills required. The old skills I think are the only skills we have just made it so someone or something else does it for us. One reason I like honing, it highlights how sharpening, like many things in life, has lost its flavour in the name of convenience and speed. But really the old way is faster and more convenient...

Definitely agree with you about how the skill has been taken out of it. I started sharpening knives using the edge pro apex and got really sharp edges but mainly was just using it based on instructions ive seen and didnt actually know what I was doing. Now I do it freehand and I actually know what it is im doing and can get a good edge very quickly and a great edge if I spend some more at it.

I'm willing to bet that you get much more satisfaction using those knives too! Testing and using your own sharpening skills. Anyone can use sharpening guides and such, they're designed to be "foolproof". I think there is a place for such jigs but not for the everyday sharpening of tools/knives.

agreed, the only times ive used the edge pro recently is when im trying to put a completely different blade angle on a knife and want to make sure that the angle is consistent like a new factory grind. And its definitely more satisfying to use my own edges on stuff even if its just some creative paper cutting before my family dulls them up again.

I don't think that would be a problem, but you'll likely have to make a few adjustments. As for holding consistent angles, simply practice. I occasionally sharpen one-handed, and it isn't a huge issue. You have to sharpen edge away from you on one side of the edge, but some people use that technique anyways so.. Best of luck! :-)

After sharpening has been completed, what do I do with the soaked stone? Do I just let it dry for a while, or while it's still drying and need to sharpen something can I just re-soak it? Looking forward to your reply! Great info in this video by the way!

hey TR! Yes, you can just lay it out to dry. At any time you want to sharpen, just throw it back in for 10 minutes. These stones aren't particular in this way. As long as they're wet enough, they'll be just fine. Some people even leave them in soak all the time so they're always ready to use, but I find that causes some mold/ mildew in the pores of your stone. Not nice.

nice work, I use 800 and 4000 grit water stones, and a strop with green compound. old guitar strap as well haha

+after12 beer Nice! 4000 grit is plenty fine for most things! No need to go any higher! The old guitar strap. Works like a charm, especially when getting raw finished leather is so difficult!

I am confused, i see some videos with people applying pressure toward the edge and some when pushing it away from the edge. What do i need to use on my knives?

You can use both! Both are effective.

@@kyle_noseworthy alright:) I did understand taking more care with the softer high grit stones to not cut them. Time to get some cheap knife set. My current one is chipped as well. Lol. Nice new skill / hobby

Very detailed tutorial, thanks. Can I apply separate processes (eg. initial sharpening, polishing, stroping) depending on condition of my edge? If yes how can I determine which of these methods should I apply? ( only stropping or using high grit stone) Thanks!

Hey! You certainly can. I would only go beneath 1000 grit if my edge is REALLY bad.

Yep, that'll happen at first! Practice with cheap crappy knives. Even dollar-store knives.

Thanks For the reply. I have a question. I noticed that one side of the blade has more edge than the other. It's the side that is pushed away form me on the stone. I seem to struggle getting the right angle on that side and I can't get the knife as sharp as I want. Does that mean I'm too steep of an angle and should lower the blade? Also, should I go back to the courser stone and start over? Thanks Again.

Did you use any compound on that strap, or just the leather itself ? Which side of the leather facing up ? Great video !

Use the rough side of leather with compound, and the smooth side if you aren't using compound!
