How to use canned chicken/ Chicken pot pie with biscuits

Our favorite use for canned chicken is enchiladas. I make them super simple, chicken, drained, cream cheese and seasonings. If I happen to have some shredded cheese handy I toss that in. Place in tortillas, roll, cover in enchilada sauce and bake.

My grandma taught me to use biscuits as a pot pie top or even cobbler topping/crust. I’m definitely trying this recipe, but for me over the years, pot pie was an easy way to use up leftovers from roast with veggies. Although now that I’m canning more, it’s good to have ideas of what meals to make with the canned meat & veggies. Biscuits are yummy & an easier way to make a crust, but having a bottom pie crust is still my favorite- in spite of the extra work rolling & fitting it to the dish. You mentioned your preference for rebaking biscuits so they don’t soak up so much broth; that would be a great way if you make the filling more soupy. I do a biscuit pot pie too, except I add the veggies and chicken in a 9×13 pan and then when I cut my biscuits I place them on top and bake them all together for 15 20 mins so that they swell and make like a biscuit crust..so good 👍😀😊

I wanted to know if you pressure canned this or water bathed the chicken. I don’t have a pressure cooker but I have water bath my potatoes and carrots I tried to water bath some chicken thighs but the jars got greasy so I put them in the fridge just in case they opened. I sound so stupid but this is the first time I ever did any of this I love Your Amish friends way I wish you would do more so I can learn more. Thank you so much bless you and your family

You can also put your biscuits on top of your chicken pot pie, and then put them in the oven and cook them that way, really good!
