Yes, I'm being educated about Africa. When I look at the map it looks like Ethiopia is in the north. I now know it's East Africa. I just like to know what people all over the world are cooking and I love to try it all! If you have another recipe recommendation for me to use teff flour let me know.

Yeiks, didn't I say teff was from Ethiopia? That's the main connection I've always made with injera bread from a local Ethiopian restaurant. Sorry if I missed the mark but my focus is to help people use the gluten free flours available and find what works best for them.

Hi Claudine! Teff flour is unique and it goes well with anything that has hints of coffee or mocha. I use it in chocolate chip cookies and brownies.

Thanks for sharing, that’s what I always thought. These day people create recipes with so many different flour combos it’s hard to know what authentic really is.
