Would be great if you can provide more information about which type of cookware is best for which food. That would be of enormous help to those planning to shift to traditional cookware in phases. Further, a comparison chart of these traditional types of cookware with stainless steel would also be very useful. Thanks

If one lives in Mumbai or Delhi and u want to do qalai you can go to any local utensil shop 1 out of 4 do qalai it's just that u will have to leave your utensil for 8-10 days

Curd set in soapstone stays good without going sour for than in metal vessel. The soapstone in which curd is set should be used only for that purpose. To clean soapstone just boil water in it & pour it out first again boil water & pour in 1-3 lemon juice in it & keep aside till it cools & wash as usual with usilam podi or shikakai podi ( if possible mixed with boiled pongankottai water ). Dish washer soap should be avoided for cleaning earthen wares & kal chatti. This process of cleaning if felt tedious then it can be used now & then when kalchatti needs good cleaning but washing with lemon water & usilampodi can be done. Occasionally very slight amount of coconut oil can be used to polish the outer side of soapstone just to prevent chipping or cracking after a longtime use as the continuos heat makes the stone chip in the long run.

Dear Zishta team, can you please tell about seasoning and maintenance of bronze and brass cookware and dining items. My new bronze glasses got so many spots when I used to clean with tamarind for first time itself.

@@Zishta for bronze items also cleaning method is same as brass.? How to remove those spots caused as I soaked in tamarind plus salt water for the first time itself.

Just to share for the kalai In delhi you can go to Chandni chowk . Simple ask your rickshaw guy and he will take you..

How do we wash clay, Manipuri black pottery items, soapstone, cast iron? For clay I know we are not supposed to wash it with the usual washing liquid. Please elaborate

And also if we can make omlet or any non veg in iron n cast iron. The last time I made boiled egg curry in iron kadai the eggs turned greenish n bluish... Upma turned black n hence request to guide us along with many on this. Thank you

Both are good. Earthenware gives cool water & your system feels good while water stored in it drunk. The water stored in copper vessel boosts one's immunity giving more strength to fight infection related diseases but copper vessel should be cleaned on daily basis & kept clean in which water is stored. To get better results it is better to use thick tamarind water mixed with usilampodi powder or just shikakai or with pongankottai boiled water mixed with usilam powder is good than using dish washer. Looks like they have also.given a link in the following comment about cleaning process which I just now saw.

You said clay vessel has a life ...what about manipuri stone vessel...does that also have a life ? If yes then how long can you use it for.??

manipuri pots can last longer and will work as long as it is maintained. They have a much longer life.

Do not do the seasoning first on the stone. Seasoning (Tadka) to be done in a separate pan and then transfer it to the Kalchatti We cannot put oil first and switch on the stove... for frying onions for gravy curries.. Should we only put water and switch on the flame. Please elaborate

soapstone after treatment, should be used for gravy style cooking for first 10-12 uses. Then you can do tadka or onion frying directly on stone.
