Use vinegar on your brassicas too. They are prone to worms. Salt water might kill them but if you only do that right before cooking, they have time to munch on your produce meanwhile. That is pretty random that you don’t know why salt water works for you. I’ve been washing my homegrown produce, especially strawberries in vinegar for years. I grow most of my produce and the vinegar wash is a must for storage and killing critters.

I found that video so interesting and full of helpful tips and suggestions that I came right over here to subscribe before I watched any of YOUR videos. This is the first one I've been watching. Still lots of interesting tips and suggestions but the screaming, hooting members of your audience are very much a detraction, being painful on the ears. I WILL finish watching it and continue to watch the other 300 you mention of just you (thankfully) yourself in your own surroundings. I think I feel a binge-watch coming on :)

@heatherinparis hi Heather, this was the very first time I spoke in front of a camera. You wouldn't know by watching but I actually had a panic attack before going into the kitchen and teaching for 2 hours. These lovely women that came knew I had to get over my fear of being in front of people. And it was a live on Instagram so that was all the people checking in around the world. There is only like 8 videos out of 325 that are not just me talking in my kitchen and now with 2 years of doing this weekly they newer videos especially in the last 6 months with the new camera and editing are so much better. I have debated many times about taking these first live videos down but they are so special to me also. I hope you stick around ♥️

I just heard Amy on Cas Aarsen's podcast so I came here to start watching Amy's videos. I'm excited to learn a lot from you, Amy. I just wish the sound was more consistent throughout the video. I turn it up to listen to Amy speak and then the person holding the camera shouts out. It's a bit unnerving. I'm hoping the rest of the videos are not the same. OK we need all of this information in a book please. I am 76 years old and have never heard this type of preserving fruits and vegetables. The most I’ve heard as you were in small stick them in the fridge don’t rinse them off because that will cause mold. Maybe wrap a paper towel around them or stick them in a glass of water that’s the most I’ve ever heard. This is fantastic start your book now please.❤️

Salt Kills and removes Bugs hiding in the florets. So that would be why I would use salt for brassicas (cauliflower, broccoli, Brussels, and cabbage)

I cut the romaine in half or thirds and stand them up so the water on you lettuce drains down! The top part of romaine I separated to juice. I soak my lettuce for five minutes to remove unwanted debris. I find that removes most!

I saw this from Cas' podcast, which I'm watching late, I guess. :) One thing I didn't see addressed (I'm not quite done with the video, but almost) and I couldn't find on your website--how do you choose what lid to use? I see several kinds on your site. Does it matter if I use the official canning lids or would the basic, plastic ones you can buy separately be good enough? I don't think the plastic ones seal thoroughly, but you aren't heating to make the seal go down on the metal ones, anyway, I think. What can you tell me about the lids?

The metal lids are important for avocados, bananas, apples and onions. Plastic lids work on most of the other items. The large gallon size jars I use are plastic lids for strawberries

5% distilled white vinegar. You can use any brand, just make sure it is that %. I have over 300 other professionally filmed videos so be sure to look at those for more content. You wash broccoli in salt water to get rid of bugs that like to hide in the florets. Same for cauliflower, and I do the same for lettuce. Vinegar is more effective against mold.

The trouble is you guys are worried about the popularity and answering our questions instead of focusing on the presenters message. Stop butting into her message. You really need to understand the excitement of that night. I was so scared and actually crying outside with a panic/anxiety attack as more then 20 women from our community showed up, another lady had offered her kitchen because ours was in the middle of a remodel. When the women offered to come and support me 2 weeks prior I had 3000 followers on Instagram and hadn't even started the YT channel yet. Within that week I had went viral and 18 million people have seen my tips. I truly have went from being someone who was a pandamic introvert to speaking on a tedtalk stage and have best selling books about produce but also helping families ALL OVER THE WORLD save Money. We are reaching over a million families each and every month. This video was the first ever time I talked in front of a group of people and also the first ever time I tried to do any sort of filming. We have since made 300 more videos if you look at any from the last 18 months the quality is much better, I am speaking alone and clearly in my kitchen and able to talk on camera. This is Video #1 from 2 years ago and many times I wonder about taking it down but if it wasn't for this night and the support we had The Cross Legacy wouldn't be what it is today. And Yes, My husband the guy in the video can be kinda a ham but he has kept a smile on my face for 26 years of being happily married.

This video needs a total redo, because it was crazy to have so many people talking often at the same time. They were almost always louder than you, and it was a total distraction from what you were saying and doing. Often questions were redundant or really unhelpful.

Back ground people were louder could hear every word they said but when you talk could hardly hear you. I want to hear what you are doing I don’t care who else from timbuck too is watching I tuned in to see how you take care of your veggies. I know that other info is important to you but you can check it out when done don’t shout it over what I turned in to hear. I liked that questions were being asked but yelling was WAY to loud Back ground people I would turn my column down but when you talked I had to turn it way up and still have hard time hearing.

Thanks for watching! This was my first ever live video and there was an audience which is why it is a little harder to hear. I have over 300 other videos on my channel which are professional recorded without an audience so they are much easier to hear. There are 300 other videos with just me in my kitchen. These first live event videos were from 2 yrs ago when I was scared to talk in front of people, since then I have lost my fear and even had a tedtalk.

I think you are spectacular but im so busy that between the hellos between the laughing between the questions i cannot see your videos..im sure you would have 5 millions views if you just go straight to the lesson..even 10 minutes would be great...but so slow and so many stories and interruptions is aweful.

Hi, this was the first video I ever filmed and it was live at an event. I've filmed over 500 professional videos since then and you can watch those to get all of the information without any interruptions.
