As I have said before, you are being too anal about it. If you are so worried about custom roms and twrp harming your hardware so should STAY AWAY from them. As for BEST ROM, thats a personal choice.

I never owned any of Nokia Android phones so I cannot comment on that, and neither have I researched on the mic quality. From what I have read iPhone and new LG's have best mic quality. I would suggest checking on xda for device you looking to purchase. They have a q&a sub-forum where you can ask about it if you dont find anything. Another place where you can get great info is reddit. they have sub-reddits and Xiaomi's sub-reddit is very active.

you can try without adding device, if it doesnt work then you will have to have mobile data. or create a new MIUI account with your email in which case it shouldnt ask for mobile data.
