Zurek, also known as Zur, is one of Poland’s most popular soups, particularly beloved in the region of Silesia. Often referred to as Polish Easter soup, it is enjoyed throughout the year. We went to Katowice and visited the Żurownia restaurant to learn more about the art of preparing Zurek and the pivotal role played by its key ingredient: sourdough.

Fantastic soup! I‘m German, but with ancestors in Poland, Lithuania and Ukraine, so it survived as kind of family recipe.❤

Żurek, king of the soups and as far as I know actually endemic to Poland. As a generally non-soup guy, this and the chicken broth (rosół) are so awesome that I can't stop eating them. Plus, both work miracles for hangover ;) I really wish Poles would open more restaurants with żurek, pierogi and zapiekanka stands abroad, I miss them often. It might be the most succesful way to spread one's culture in a very pleasant way :)

I have a friend in Dublin, whose maternal grandparents were German (from a part of Germany that is now part of Poland - I think Silesia?) and he makes something like this - but with the addition of Cayenne pepper - every Easter. Very tasty 🤤

Silesian żur is stronger than Greater-Polish żur (żurek), but without the white sausage and egg.

No, barszcz bialy is made of wheat flour, and żurek - rye flour.

My career gave me the opportunity to spend a lot of time in Dołny Slask region of Poland. The people were awesome to me, and they know how to serve up some seriously good comfort food!

Here it is! Aweome to see this video. Żurek is definitively the favourete dish, altho another staple on my family's table has always been egg paste which is then spread on top of freshly baked bread. Very iconic, with an addition of horseradish.

Żurek isn't Żur, Żurek is whole poland Żur like soup, Żur is traditional silesian soup.

Well spotted! In both videos we filmed with chefs who are originally from Ukraine and have been working in Polish restaurants for many years. Just goes to show that Ukrainian chefs are cooking up some great food in Polish restaurants. And we felt it’s also a testament to cross-cultural influences between the two countries' cuisines. Cheers to celebrating diversity in the kitchen! 🎉

It's lovely when people who came from another place may not only successfully incorporate into society but furthermore, they become it's good members. In fact, western Ukrainians love zhurek, too. Same as Slovaks. Like pizza, this dish becomes international. While traveling through Poland I use this occasion to taste zhurek or flaky, another polish/ukrainian soup.

Polish Easter and Christmas traditions are devoted entirely to Jesus. During Easter, we bless food (different foods symbolise different things) in a basket in a church. We fast and attend mass.

Ukrainczycy - tania sila robocza . Wlasciciel Polak. Podcast ten " oblatuje caly swiat" ( ogladam to w Montrealu ) Dlatego tez przydalaby sie niezkazitelna Polszczyzna ! . Zaden jezyk nie brzmi poprawnie jezeli mowi sie go z obcym akcentem - wierz mi wladam siedmioma . Po 54 latach poza krajem nadal mowie z poprawnym akcentem , ( robie byki w pisowni ,no ale co sie dziwic wyjechalam mlodo z ojczyzny 😥) , mowiac po rosjsku nie mam polskiego akcentu ! So Prussian dish with lithuanian name is now a soup eaten during Easter. Or you could go to the Chinese, Korean, Japan place to eat miso, kim-chi, wonton since we knew those before all of you.

Yeah, Prussian. Sorry, it's a miss - żur, kyselo or kisjalica is very old and certainly not Prussian. And we knew those before all of your miso, kimchi or wonton. Try harder next time.

For non English speakers, that is a verbal filler whilst they try to think about what they want to say. It isn’t that he is trying to sound like a Valley girl from California. Instead, he should learn it is okay to pause and say nothing then continue speaking. It also could be nerves. Be kind instead of critical.

@@kscptv I lived in Italy for 10 years, never said "Boh" every few words. I could barely speak conversational Italian and even I knew not to do that. It's no different than "Ummmm". Don't do it, regardless of the language.
