Wonderful story, so inspiring! I can totally relate, since I make my own borsch at home, without meat, using lentils and beans, onions, spices. Everyone loves it!

Wow, that is great ! In Ukraine we don't cook borshch with lentils, but actually there are no clear recipy for this dish - everyone one mix whatever they want, but the key ingredient is beetroot.

When russia invaded in 2022 there was a restaurant here in Sweden who started serving Ukranian borsjtj, and I tried it for the first time. Best soup I ever had! Since then I have asked multiple restaurants if they would consider serving it. I even tried making it myself.

Great interview! I love stories like this. I wish Liliya and her partners much success! This seems like a really good business model. If I was in England, I would definitely visit their restaurant to try the borsch and other menu items which sound very good, including that coffee.

My wife and I were in Odessa about 10 years ago and we had lunch at a random restaurant and I had borshch...it was absolutely wonderful! It came with a side of salo. It was prefect.

I would ALSO LOVE to have a Ukrainian restaurant in my town in mid- Michigan ! I have never had the PLEASURE of tasting borscht or any other Ukrainian dishes, And would SO DEARLY LOVE TO have such an opportunity!❤❤❤❤

Excellent interview and very interesting. When my wife came from abroad (I am withholding her country of origin for security reasons), I suggested she look at her national dishes and consider which ones could be turned into fast food. Unfortunately, her experience with starting and maintaining was not positive (apparently, despite the official pronouncements of that government in the country of her origin that was no corruption, she knew too business owners who paid "special" contributions on a monthly basis, and there was a lot of red tape to start up a business). She met an accountant who helped her with setting up a tax business. She was amazed at how easy was to incorporate and start earning money.

Thank you for sharing this, I love hearing about Ukraininan men & women who are "landing on their feet" in the turmoil of the Orc invasion. The best borscht I ever had was at a cafeteria near the University in Donetsk. Shushkovsy Coffee sounds divine! Can I buy some from you? I see nothing online & it is far from Texas to UK : (

How about I come to Ukraine and make you rib eye steak and lobster and baked potato with cooked bacon, chives, green onions, and a lot of sour cream, and artichokes? Potatoes chips, barbecue chicken with spices, and hot dogs? Beer, Pepsi, onion dip, ranch dressing, blue cheese dressing, and hot wings! Hot chicken wings! And I can make Borscht to go with it! I just can’t make desert! I have my sister make pancakes with lingonberry, blueberry, and rasburry, with KARO or corn syrup! It’s very sweet! That’s American Barbecue!

these kinds of Ukranian more likely to convert to British nationality. the real poor refugees are stack in Ukranie helpless because of no international passport and money to start new life.

No, at all. When the war started, everyone was able to get out of Ukraine without passport, visa, only with any kind of ID. And it was for first 3 month. Passport cost 30$ and I don't think someone can not afford it. Money to start new life? People get houses from government or locals, they got financial support... in the beginning of war was hell of help. After that it is for sure up to person: you are learning language and going to work in new country or you most likely will come back to Ukraine. This kind of Ukrainians who now are living abroad are working hard to afford it.
