Markets like that are pretty much self regulating, if you sell rotten food and follow no hygiene then people will get sick and not buy from you so you have to close. The issue is the meat/animals they are butchering. They are not bred for eating, they are wild and by western standards unusual animals. That is why unusual and new diseases come from places like China and Africa. Western food production for all its failures does produce alot of food that is safe for us to eat and its only when we do things like feeding cows to other cows to make food cheaper that we encounter problems like mad cow disease (vcjd)

The strain of coronavirus which is found in bats can not infect humans. It can not stick to our cells. So it had to mutate in order to infect humans. And this particular strain of coronavirus (covid19) is showing a remarkable rate of mutation. Bats>> pangolins >> Humans >> and now a positive case in a dog. Plus now we have two strains of covid19 infecting humans. And all of this happened in a matter of a few months. Covid19 is a wakeup call for humanity. We have to change our lifestyles. No matter how technologically advanced we become, our existence can still be threatened by these tiny genetic codes which are not even considered as living organisms.

How fascinating and amazing is that 7% is a large amount and for all of the human race to have this means that it's been happening over Millennia that humans have been evolving and developing before we had any kind of written language in before any of the things that we know anything about.
