How To Boil Crawfish
These delicious little mud bugs are a delicacy in the South. And I know it’s not bbq but I think everyone should know how to throw a crawfish boil.
First you’ll need a big pot and strainer basket. I use an 80qt aluminum pot made by Bayou Classic right here in Mississippi. They also sell the jet burners that I use to bring the big ole pot to a boil. Next you’ll need to source some crawfish. They’re available all over the place now days. Ask with your local seafood guy, or check out one of the Louisiana companies shipping them straight from the bayou.
Once you have the necessary equipment and the crawfish, it’s easy, but more fun to do it with friends. I invited my Buddy Mark Williams from Swine Life BBQ / swinelifebbq over and this is the recipe we’ve perfected.
For our setup we use 2 pots and 2 burners. The first pot is the boiling pot. This pot cranks up the temperature and cooks the crawfish.The second pot is where we soak the crawfish at a lower temperature so all the flavor in the pot gets drawn into the crawfish. Both pots are filled half way with water about 40 quarts each. Then the burners are lit and we add the seasonings:
- 4.5 lbs dry crawfish boil
- 32oz liquid crawfish boil
- 1 stick butter
- 1 cup vinegar
- 1 cup kosher salt
- 1 bottle Killer Hogs AP Seasoning bit.ly/TheAPRub
- 1 bottle Swine Life Mississippi Grit Seasoning bit.ly/SwineLifeGrit
- a handful of garlic cloves
- one lemon
Each pot is brought to boil and allowed to cool twice, so all of the flavors are mixed well and concentrated. At this point leave the burner going on the cook pot and turn off the heat on the soak pot. We want the soak pot to cool off all the way down to 160 degrees.
Now you have to clean the crawfish; basically wash all the mud and dirt from the swamp off of them. I use a tub called “The Crawfish Washer”; but you don’t have to use the crawfish washer a simple cooler will work just fill and drain it multiple times until the water is clear.
Dump the clean crawfish in the strainer basket and lower them down into the boiling pot. As soon as the pot returns to a boil (about 5 - 10 minutes) set a timer for 3 minutes. The crawfish will turn a bright red and float to the top of the pot. Carefully pull the strainer basket out and lower it into the soak pot. Stir the crawfish around and set a timer for 20 minutes.
If you’re only using one pot you can simply add a 10lb bag of ice to the boil pot. Be sure to kill the burner and stir the ice into the pot. It will chill the water down and create the same effect. It’s great for 1 sac of crawfish but if you’re cooking multiple sacs, you’ll have to add more flavor because the ice will dilute the water.
Once the crawfish have soaked for 20 minutes, dump the strainer into a dry cooler and close the lid.
Drop the potatoes, onions, garlic, and mushrooms into the strainer basket and lower it into the boiling pot. Cook everything for 10 minutes and add the smoked sausage. Cook another 5 minutes and check the potatoes for tenderness. As soon as they’re fork tender turn off the gas and add the corn. Let it soak for 5 minutes and it’s ready to eat.
Dump the crawfish out on newspaper and add the sides and you’ll have a crawfish feast. All you need is some buddies and a cooler of cold beer!
**This recipe is for 2 crawfish pots (1 cook pot & 1 soak pot)**
- 2 sacks of live crawfish
- 80 quarts water (40 quarts ea. pot)
- 2- 4.5 lbs bags dry Louisiana Crawfish/Crab boil seasoning
- 64oz Louisiana liquid Crawfish/Crab boil
- 2 bottles Killer Hogs AP Seasoning bit.ly/TheAPRub
- 2 bottles Swine Life Mississippi Grit Seasoning bit.ly/SwineLifeGrit
- 2 cups white vinegar
- 2 cups kosher salt
- 2 sticks butter
- 2-3 lemons halved
- 2 dozen garlic cloves
Crawfish sides:
- 3lbs new potatoes
- 4 medium size onions
- 2 dozen peeled cloves garlic
- 4 pints whole white mushrooms
- 4lbs smoked sausage cut into bite size pieces
- 2 dozen corn on the cob (small size)

I want to try them so badly but they honestly freak me out a little bit :( I don't like the idea of having to suck out all their stomach innards and such. Someone else said doing this boil with crab legs is great so I would be so down to try that!

@@SanguiphiliaTV Not everyone sucks the heads, I don't, tried it once but not my thing, but the tales are amazing, but the heads do make a great soup base for jumbo, and gumbo, we had an 87 year old as a (she is unfortunately passed away now) lunch room lady at our local high school, she would save the heads and cook them down until all the goodness of them came out into the base, she then cook that down add rice and homemade sausages and then add heavy cream and slow cook for an entire day, it is still the best gumbo I've ever had and I honestly miss it a lot and have never been able to copy her recipe because she never wrote it all down, it was a recipe that was passed down in her family sense just after the civil war. It an Alabama recipe she used to tell me. She would get up at 4:00am in the morning and make enough for 400 students and teachers then let it cook in the back of the lunch room (before they redesigned it unfortunately taking out the original gas stoves in the very back LoL, now it's only frozen meals they heat up in an oven) and feed it to the school.....I miss that old lady she was extremely sweet and loved her job.

This video made my day. My two favorite KZbin‘ers collaborating. Such fine people. Thank you both! FYI, I made my version of swine life’s boneless ribeye last night as a celebratory meal for my wife last night. The one with the stone ground mustard butter. I went prime and took it off the heat around 120 degrees. I did it on the kettle instead of my pellet grill. It turned out amazing. The butter had a lot more citrus flavor than I expected, but I didn’t notice it being overly citrusy while eating. Also, I substituted thyme for rosemary due to the materials I had available. I also did some corn on the cob that I used the remaining butter mixture on. Whooooooohheeeee! We dined sufficiently! Thanks again ya’ll!

I am from (and live) in Montana. I’m in the beginning of a brisket cook as I am trying this post. I’m weird as I don’t really enjoy eating what I cook but I’m absolutely in love with the cooking/smoking process. But crawfish... damn!!! I’ve never had crawfish but I’m sure I’d love it!! These look like the best crawfish I’ve ever seen. Malcom doesn’t claim to be the crawfish guy or ever talk about being a crawfish expert, yet this is the simplest most delicious looking recipe I’ve seen for crawfish on KZbin so far. I’ve always wanted to do a crawfish boil, the only bad thought that crosses my mind is the sausage, for some reason the boiled sausage seems like it wouldn’t be very good but I guess I just gotta try it

I miss the days in Houston with all of my neighbors always doing crawfish boils! Those were some of the best times I had!! I’ve tried crawfish before but not the way they did it in Houston. This Arizona boy sure wishes we could do crawfish boils here!!

You can still do crawdad boils in Arizona!! Damn near all the lakes in the North have them, we did a boil every summer growing up when we would visit Lake Mary near Flagstaff :)

I've been a two pot guy for about 15 years. My soak pot is 145 and the boiled bugs rvideo it to 160. My soak time is longer but to each their own. Great vid.

It feels so good to see a crawfish/ low country boil done right. It is cringe so see people just boil it in unseasoned water and then sprinkle the seasoning on top. Although I don’t eat meat anymore I was excited watching this. It reminds me of my childhood growing up in Coastal Georgia and eating seafood all the time. It brought back good memories when I saw the red sausages.

Not sure if Malcolm or Mark will see this but I've been using this exact recipe but with Malcolms King Craw boil and Mark's Mississippi Grit and it hands down has not let me down with the neighbors or strangers who have eaten my crawfish! Best recipe for crawfish in my opinion no doubt!

Geordie NUFC going to an actual boil is very different. The flavor is insane. You buy them by the pound and your mouth is gonna be on fire but you won’t want to stop. And suck the heads. Seems gross but you pull all the season out

D G The ones I bought here in alberta canada cost the equivalent of $20 US for half a pound. I would need a mortgage to buy more. Also it took 3-4 crawfish to get as much tail meat as there is in one regular shrimp. So many of the recipes that MR does for youtube would be fantastic to try.

Good tutorial, from New Orleans, yall need waaaaay more citrus, way more lemons and *oranges*, try Zatarain's is brand to use, looks good guys, best tutorial from outside Southeast Louisiana I've ever seen lol, good job! Seasoning on top is North or West Louisiana style, no season in the boil 🤯🤯🤯....for the life of me I do not get it

Strawberry reservoir has a lot of them. Use scrap pieces of salmon and you will fill pots fast. People use chicken, canned cat food ect. But we have them here in Utah. Check this out kzbin.info/www/bejne/pJ-rZ4CHirl4rbs

The secret to real gooood crawfish is to clean them really good. No dirt in the crawfish at all makes them 1000% percent better
