I actually have a papaya tree outside my window here in Florida. They grow and ripen in their own time, and ours ripen to yellow it seems. Maybe they'd go to green if they stayed on the tree longer but the tree is pretty young still. Fun fact: unlike other fruits, papayas stop ripening as soon as they leave the tree. Unripe papayas not taste good at all. Do not recommend. I love this cake Yo!
