⬇️⬇️English recipe follows⬇️⬇️ 淮山炒牛肉 材料: 鮮淮山1條 牛仔扒1磅 乾蔥頭2粒 蒜頭3粒 薑1舊 蔥粒 處理: 1. 鮮淮山,清水洗淨。 2. 牛仔扒,打橫切薄片。 3. 牛肉調味: a. 生粉半茶匙 b. 油2茶匙 c. 蠔油2茶匙 d. 紹興酒1茶匙 e. 胡椒粉少許 攪勻,醃15分鐘。 4. 蒜頭,切片。 薑,切片。 乾蔥頭,去皮,切片。 烹調: 1. 大火煲滾1鑊水,加入鹽半茶匙。 2. 淮山,用紙巾揸住,輕手刮去皮,清水洗淨。 3. 淮山,打斜切片。 4. 水已煮滾,放淮山出水1分鐘,去除多餘澱粉,擎乾水。 5. 大火在鑊中燒熱油2湯匙。 6. 爆香薑片。 7. 加入蒜頭爆香。 8. 放牛肉煎香,加入乾蔥頭。 9. 牛肉煎了一會,反一反轉,放淮山回鑊,加入: a. 紹興酒1湯匙,炒勻。 b. 蠔油1湯匙,炒勻。 c. 蔥粒,炒勻。 10. 完成,上碟,可享用。 Stir frying beef with fresh yam Ingredients: Fresh yam 1 log Veal steak 1 lb Shallots 2 Nos. Garlics 3 Nos. Ginger 1 No. Green onion cubes Preparation: 1. Fresh yam, rinse with tap water. 2. Veal steak, thinly slice horizontally. 3. Season the beef: a. Tapioca starch 0.5 tsp b. Oil 2 tsp c. Oyster sauce 2 tsp d. Shaoxing wine 1 tsp e. Pepper little Mix well. Season for 15 minutes. 4. Garlics, get it sliced. Ginger, get it sliced. Shallots, get it peeled and sliced. Steps: 1. Heat up a wok of water at high flame. Put salt 0.5 tsp in wok. 2. Fresh yam, hold it with kitchen towel. Scratch its skin lightly. Rinse with tap water. 3. Fresh yam, slantly slice. 4. Water boils up, put fresh yam soak for a minute to remove excess carbohydrates. Hang dry. 5. Heat up oil 2 tbsp at high flame in wok. 6. Fry ginger well. 7. Add garlics, fry well. 8. Put beef, fry it, add shallots. 9. The beef has been fried for a while, flip over. Put fresh yam. Add: a. Shaoxing wine 1 tbsp, fry well. b. Oyster sauce 1 tbsp, fry well. c. Green onion cubes, fry well. 10. Complete. Put on plate. Serve.
