I think its the concept of the show. Usually there is a focus on either savory and spicy or sweet dishes. This show is all the inbetweens. Not many will dig those dishes. I think sweet spice would have been a better concept.

I love watching Rick. Ive always had a bit of imposter syndrome being a Mexican (south texas born and raised) but cant make so many traditional and nuevo Mexican dishes. But it seems like watching him I get this whole "wait a min, i think i can do that" Also he seems like he'd be a blast to hang out with !

I had no idea other cultures used hibiscus to make drinks, in Nigeria we use roselles, a species of hibiscus to make a drink called zobo. It's spicy but refreshing.

You can buy chorizo spice mix online. It works pretty well with crushed, crumbled tofu actually

I never had meat chorizo (gringa here), but Trader Joe's has a delicious one that is made by a company that specializes in meat chorizo. Sometimes in Walmart there is vegan chorizo next to the meat chorizo from the same brand and that is good too. Both do have some oil which helps all those flavors develop, but nothing close to what Rick's chorizo has here.

If he cooked them the classic Mexican way, he let them cook for hours and also added some epazote, onion, and maybe some garlic. My mom and grandma always cooked black beans that way.

Or pressure cooker beans or make them on the weekend while you do something else - they are SOOOOOOOOOOOOO much better! I thought I didn't like beans before I started making homemade beans with fresh dried beans.
