A tip for anyone who uses masa Harina... put some lard in a microwave and get it nice and soft. fold it into your tortillas. Tortillas taste better with lard.

My mother-in-law, born and raised in a tiny Mexican village, used to make us Huevos Rancheros whenever we’d stop by on the weekends. There’s nothing better, and it got so we’d crave them. They were quite addictive. Sam, you brought back some great memories. Thank you.

Yooo Sam, the technique to making perfect tortillas is to make sure the pan is extremely hot. Then place tortilla and only flip once! The tortilla should Inflate, that’s how you know you did a good job. 👍🏻

Just make sure to use lukewarm- warm water so your tortillas don't crack .. I learned that when I used cold water 🙃

One of my all time fav breakfasts my Mom used to make us when I was a kid was HUEVOS RANCHEROS. Hugely popular in Colorado where we lived at the time. She was a HUGE fan of this channel and you Sam. Ironically she passed away 10 months ago today from Breast Cancer. Thanks for this video and it couldnt have been a more perfect dish to make today. 🙏🙏🙏

Looks good Sam. I prefer to mash then heat the black beans before putting in tortilla, skip the raw onions in favor of sauteed, add chorizo and drown the whole thing in green chili sauce. Served up with my spicy pan fried potatoes and garlic with smoked paprika and we have a freakin' feast.

Ram is correct, I am also Mexican and can confirm. It's called Huevos Rancheros, because it has a salsa ranchera. A brothy red salsa, not pico de galo. This still looks hella good. And also, I was born in Albuquerque and can confirm that the New Mexican version with red and/or green chile sauce is also bomb

My recommendation on the Tortilla cooking would be to put it in your toaster oven for a few mins on 450 to get it initially cooked a bit, take it out and dress with oil or butter and put it back in at 450 till desired crunch. I developed this technique after realizing the tortilla soaks up all the oil in the pan before it even starts to crisp, which looks liked happened here to Sam as well.

Which is strange because Sam is usually all about the heat of the oil when deep frying or shallow frying so the food doesn't absorb the oil 🤔

@@DerekBolli I've tried that and the tortilla still absorbed a bunch. Try the toaster oven method if you want superior results. Sam knows way more than I, this is just one tiny thing I feel I taught myself to do better.

You may wanna try cooking sliced onions with diced tomato garlic salt and pepper to make a salsa instead of the pico de gallo… love the wet tortilla. I think putting smashed refried beans on the tortilla would up this up and hell yes to cotija. Love uuu forever!!! Just made ur roasted chicken

Looks delicious! This is one of my favorite breakfast my mom makes. With the pico you should try cooking it in a bit of oil then add a little tomato sauce and a bit of water to thin it out and put a bit of chicken bouillon.

You were so close to using saran wrap the right way. Just get two corners, one in each hand and place an edge onto the bowl bowl edge and pull down to get a stick then press excess down, grab the wrinkled mess and pull against your anchor point you made to find your other two corners, get it nice and perfectly tight so you feel like a boss and your done.
