I know this is off topic, but can you ever make a video on how you mounted an aftermarket CPU cooler on these optiplexes?

Not really off-topic at all! The stock Dell motherboard has a the standard Intel mounting holes through the motherboard. All you need to do is break off the metal stand-offs on the case (they're soldered to the case for some reason) and use the aftermarket cooler's mounting backplate

If only I could fit an RTX 3070 into the chassis! The best you can fit inside the stock chassis is an RTX 3060 Ti

Correct! It is in fact the smallest 3070 available at the moment. Unfortunately, it is too tall to fit inside the chassis. I wouldn't be able to get the side panel on the case.
