I'm lucky to be able to have authentic pad thai in my town (Fairbanks, Alaska) we have the best pad thai here in the whole USA thanks to our local amazing immigrants from Thailand

There are many variations of Padthai. I grew up in Chiangmai which is in the north. The Padthai that I am used to is brown from the dark soy sauce. There are dried shrimp, hard tofu, dried preserved radish, the vegies will be beansprout and chive. Later I lived in Petchburi and Hua hin and their Padthai is slightly different in taste. There should be : sweet, slightly sour and salty. They would used tamarind paste, fish sauce and palm sugar to make the sauce. There would be no dark soy sauce in it. But the thing to give out the Padthai taste is the preserved radish and chive which give out very distinctive scent. And NO ketchap in Padthai. I have been living abroad for almost 30 years, my Padthai is still the same as the one from my childhood with dried shrimp.

It need not pre-boiling. the heat when stir frying will soften the noodle with the Pad Thai sauce. Some cook may add a little water when fry.

Soak them in warm water for 10-15 minutes. They're not cooked but flexible.
Pretty sure that is fish sauce. Brown in the bottle, looks clear coming out.

Noodle products from Thailand is hygienic control product. They are ready-to-eat or cook. You don't need to clean them at all.

i’m slightly disturbed by the fact, that American music is being played in the background even sang in their native language. i would’ve expected to hear their own music of Thailand and not a westerners song. when traveling outside the U.S. i want the sounds of Asian culture or whatever country i’ve traveled too! i must say the pad Thai is one of my favorite foods and it looked amazing! ty for sharing!

those 2 menu are far different in flavor and touch. Pad Thai is more spicy, tasty, chewy, kicky. And it has got very unique sweet and sour flavor from mixture of palm sugar, sour tamarind, pickled radish and lime.

Helen stfu. You're not the one eating and no one is forcing you to not do it for your own self. I'm tired of idiotic westerners coming here with their shitty standards. I figure you're from the US so...if I were you I'd worry about the metal, rocks, salmonella and other insane things found in your food. There is nothing wrong in eating a shrimp whole, it's a question of taste mostly and most people can't even tell.

In the USA about 1% of people are employed as farmers or ranchers. In Thailand about 50% of people are employed as farmers or ranchers. Wow, Thais eat a lot!

I don't know exactly. But I think all of them are rancher who hire workers from neighbor countries like Burmese, Laos and Cambodian. You can very hardly find Thai workers to do farm work. The new educational policy (started out around 15-20 years ago, countrywide.) entitled 100% of Thais educated in professional levels. Some received professional certificate, but mostly received bachelor degree. So they all prompted for higher paid works.
