Put onions in the freezer for about 20 minutes before cutting them, this really helps, no more tears

Ngl, when I was a small kid, I always thought Rancheros meant "ranch dressing" so I assumed it was Eggs in ranch. When I saw then as a kid, I was throughly disappointed.

Somebody told you wrong my friend those are not huevos rancheros, if anything tostada de huevo could be the closest but not huevos rancheros (rancho style)

Chef Frankie Celenza, an enclosed food chopper, would save your eyes from tears. They're relatively inexpensive.
