It's like your soto ayam. Same type of noodles and also uses chicken. But the Philippines uses anatto seeds for coloring and flavor, which is why it's colored red.

Medyo mahaba kasi history ng pancit/noodles sa Maynila bunga na rin na andun ang Binondo. Nung nagresearch ako dati ng mga iba't ibang noodle dish ng Pilipinas, pinakamarami nanggaling sa bandang Maynila at mga karating lalawigan. Kaya ganun siguro. hahahahha. Dito samin ang uso naman na street food na noodles, Pares Mami.

I discovered that about a year ago watching Asian recipes on KZbin, it was always with a boiled egg or a fried egg or sometimes they just bung a raw egg on top of their noodles and the heat from the bowl cooks it :)
