Sheik's air mobility is awful, especially compared to Jiggly, the risk of choosing defensive options is that you will get rested, and trying to trade with the upairs just isn't that doable with Sheik because she doesn't have the air mobility nor a downward hitbox big enough. It really is a bad matchup when Sheik is being juggled. It's usually a lot better to try to mix up your DI, take the least amount of damage, and get out of there as best you can.
