Çibörek or chebureki is a deep fried dough filled with juicy minced meat and onions. It can be compared to an empanada or even samosa but I find çibörek much more satisfying with the thin crispy fried dough and the simple juicy mince filling.
Cheburek is sometimes (arguably incorrectly) called çiğ börek ("raw dumplings / borek") in Turkey, brought to Turkey during the Crimean Tatar Diaspora into the Ottoman Empire. Being a national dish of Crimean Tatars, it is quite popular in Turkey where the Tatar community exists.

Ingredients:
Filling
• 250 g beef mince (preferably lean)
• 1 onion
• 2 tsp salt
• ½ tsp black pepper
• water
Dough
• 4 cups of all purpose flour (550 g)
• 1 cup water (200 ml)
• 2 tsp salt
• 1 tbsp white vinegar
• Vegatable oil to fry

My grandma made them with beef stock and parsley in the filling or sometimes with yoghurt instead of beef stock. They were really juicy

This looks delicious! And of course I would love these because here in NM, we have Navajo Fry Bread, sopapilla's and stuffed sopapilla's which this reminds me of! Love it!

The last time i ate Ciborek was 4 years ago in Eskisehir, Turkey. The music goes well with this recipe. I will try this recipe next week hopefully, only i will replace the minced meat with minced shitake mushroom.👌

"ÇİBÖREK" (Chiborek) belongs to the CRIMEAN TATARS, the indigenous people of the Autonomous Region of Crimea, Ukraine. "Çİ" in Turkic means beautiful or delightful; "Borek" means pie or dumpling, another words any form of usually baked dough- sometimes fried and sometimes boiled as in "Kaşık Börek" (Spoon dumpling), Manti in Turkey.

Looks delicious!.. Why do you add vinegar when making dough? What vinegar gives to dough? Thanks

Acidity in the vinegar makes the dough super crispy and prevents it from absorbing the hot oil. So it stays soft inside and super crispy on the outside.

You sure put a lot of meat in it. My grandmother is flipping out in her grave. She used to kind'a shmear the meat because it was so costly. The taste was still spectacular. I think it was because she added more water so that the meat juices would run down your arm as you bit into it. Mmm!!!!!🤪

II could not walk by this recipe, since we love ciboreks!! the only different with the ones we make - we use pork, and not beer. But these look so good, I'd kill a stack myself!! +1!!!

Yes, but then they would be too dry. Maybe brush with a bit of oil if you can.

Uhh, what was the point of draining the onions if you're gonna add the liquid 30 seconds later?

Good question! That's optional, but it's to make sure you don't add too much liquid into the mincemeat mixture, with the juice separate you can adjust the consistency of the mixture if need be.
