Cayenne is Chef John's personal taste spice. He never suggests anyone use it unlike smoked paprika. So it doesn't rightly belong in this list of 5.

I like using citrus zest, the vinegar from pickled Jalapeños, bacon grease, 1/2 an apple (or other sub acid fruit) in soups. also just a 1/2" of fresh ginger in a pot of soup.

Ah, Armando--We should be friends. The most decadent popcorn is popped in bacon grease and seasoned with butter, salt, vinegar from pickled jalapenos, and nutritional yeast. (If you're not familiar with nutritional yeast, try it on popcorn.)

my secret incredible in a few great recipes I have is my Vidalia onion jelly. a little goes a long way, but it's so delightfully sweet and savory at the same time. I put it in many pasta sauces, and works as a great steak or pork condiment.

Chef John, i am an aspiring Chef and am currently attending the CIA ...anyway..the fact that you showcased smoked paprika justified the fact why i have taken a liking to your cooking/show...i have told myself once upon a time that " i love smoked paprika, i think this is seriously going to be one of my secret ingredients...since i use it in several applications .." the only difference i have , which adds a bit more depth is the fact that i use smoked Sweet paprika...i absoluuuutely love it...thank you for providing us cooks with quality food and recipe demonstrations... you da man! haha

The use of anchovy oils and small hints of anchovies is such a well-kept secret. It's basically MSG since it has that 'umami' flavor to it in small doses. Add it to anything with a high sodium content and it will enhance the flavor of the dish. Hint: Garlic Pasta, Fried Rice, breakfast sausages, etc.

For savory foods, its fish sauce and Gochujang. Obviously they are work horse ingredients in Thai and Korean cooking but they are also great for amping up the flavor in many classic American recipes. Any recipe that uses ketchup benefits from a little of both: BBQ sauce, baked beans, chili, the ketchup glaze on meat loaf, thousand island dressing etc. For sweets, Tonka beans and palm sugar are great added to recipes that also use vanilla and brown sugar, respectively.

Anchovies always stick them into a meat sauce. Pomigranite sauce, go's a treat in salad. When im making curry , cloves/star anise/cardomen pods and white mustard seeds in oil before you cook , really gives extra flavour ...
