Hi Joe, I'm a Thai home cooker. I really appreciate that you love Pad Kra Pao. I have to say something you said at 6:30 Yes, You can use "Light" Soy Sauce with Kra Pao sauce but "Palm sugar" is a bit strange for me. Kra Pao sauce is basically made from 2 core ingredients. 1. Fish Sauce < Soy Souce had a different aromatic 2. Sugar (Granulated white or brown, but do not use palm sugar) - MSG, Stock, Oyster Sauce (optional) Sometime we put Seasoning Powder too (Ros Dee Brand) and a few drop of "Dark" Soy Sauce for coloring. Love,

Yes my friend, some people used it if they like the taste and smell of it just like Many Thai people do not even put sugar in their Pad Kapraw, if they put just only to Cut down the salty and spicy taste to U-MA-MI taste.

I am in Bangkok for the first time this week, and I had saved your video under my Google Maps recommendations. To say that I was amazed and impressed by this Pad Krapao restaurant, would be a severe understatement. I was absolutely blown away by the flavors of their dishes. I’ve had Pad Krapao many times, but never anywhere near this good. I loved it so much, I will be going back today for lunch. If anybody reads this and sees me there today, I’m wearing a red T-shirt and a black baseball cap; please say hello. Super solid recommendation, keep those wonderful review videos coming. 😊

Joe your advertising for MW by telling us to forget him, LOL, I have been to BKK so many times in last 25 plus years, before MW was a household name, and very recently saw his restaurant at Ekkimai. it was packed to the brim at 2 pm, that tells you something. If you have as many followers as him you dont need to say a word. You are 100% spot on when saying other locations have better more authentic Pad Kra Pao and cheaper, plus these places need the business. Great video sir.

haha to be fair, I also like Mark Wiens pad kra pao. He does use high quality ingredients and you can taste that. But there is something special about a local pad kra pao

This restaurant provided such tasty, big shrimp Pad Kra Pao, which was relatively inexpensive. Combining dried chili and fresh chili gives the aroma and flavor of Pad Kra Pao better. Being able to endure the spicy smell of Pad Kra Pao while filming showed that you have become entirely accustomed to the Thai way of life.
