Regardless of how complex a song sounds, the notes used in the riffs and melodies imply particular chords (that aren't necessarily being played outright). Once you figure out what those chords are you can translate the song to be played with whatever instruments you like. An example of this is Hide and Seek by Imogen Heap. The original song is just a vocal melody with no other instruments, but there is an instrumental cover by Antoine Dufour (on youtube somewhere) that's just an acoustic guitar.
