Around 1949, many defeated and scattered Nationalist soldiers fled from all over China to Taiwan with gold and national treasures of the Forbidden City. Over time, many of them began to miss their hometowns and the food of their hometowns, and began to use local ingredients to alleviate their homesickness, forming the local characteristics of Taiwan. Taiwan now has a population of about 23 million, of which the largest group are the descendants of the local Fujianese who came to settle the land from the Tang to the Qing dynasties. The rest are the soldiers and their descendants, who mainly speak Mandarin and then Fujianese. That's why Taiwan's English name is ROC, which was the name of the government before 1949 in China, and now is PRC. Currently, Taiwan Province occupies and manages 58 Fujianese islands, but because of the same blood ties, there has always been a lot of interaction between the two sides in terms of life and trade. However, because the civil war in China has not yet ended, both governments claim the right to administer the other. That's why wherever you go on these two sides it feels like there's a lot of the same parts.

It's good that the Forbidden City's national treasures were moved to Taiwan and safely kept and displayed in the National Museum for later generations to enjoy. Otherwise, they would have been vandalized and smashed to pieces during the Cultural Revolution of the 1960s.

Also that peanut thing might be or the dark brownish one might be most probably sweet red bean paste as its a typical Chinese desert sweet filling? or it could be lotus paste, the filling inside your moon cakes... or at least one of your moon cakes..... theres lots of variety of moon cakes..... usually you cut the moon cake into bitesized triangles and not eat one whole XDDD Because its really filling and thick!!!

Taiwan is part of the Republic of China, definitely not the illegitimate People's Republic of China. The People's Republic of China started out as a puppet state called the Chinese Soviet Republic in 1931, with the Soviet Union as its patron. Then, during the Sino-Japanese War, the Communists colluded with Japan while the Kuomintang was fighting the Japanese. This is the reason the Communists rapidly gained power during the war and were able to seize power in a few short years after the war ended.

I might add that because of the People's Republic of China's dubious origin, once it came into power in 1949, it announced that it would not recognize the unequal treaties imposed on China by the Western powers, with the exception of the unequal treaties forced upon China by Tsarist Russia. This is also the reason why Mao proudly proclaimed that Stalin was the benevolent father of the Chinese people.

It depends on the type of noodles you order. This time you ordered dry noodles so the soup is a free item to accompany your meal. If you ordered soup noodles, then the soup goes in to be mixed with your noodles.

You got me confused for a second by saying you were trying Taiwanese food while being physically in the Fujian province. But I can see that you have no bad intentions. The situation is indeed a bit confusing for foreigners :) Taiwanese food is basically mostly Fujianese + other province influenced + Japanese inspired + locally invented. Some local dishes invented in Taiwan then also found their way back into Fujian since they are very close to each other.

Since most mainland Chinese cannot go to Taiwan now due to the current political situation, people come to Fujian to experience what it might feel like in Taiwan, thus giving anything associated with "Taiwan" a special value. But actually Fujian, especially in Xiamen, has many shared culture with Taiwan. You could actually check out Taiwan next time and see if you can recognize anything you've had before in mainland China. They do have their local specialties as well.

You are at the right place but ordered the “wrong” food. Lots of the stuff you ordered are tourist traps such as the shark balls, starfish, “sea urchin”(really mostly eggs because fresh sea urchin is very expensive). Try things that look less shocking but eaten by the locals. The pancakes you ordered is a good local favorite.

that street looks like se asia 😅. remember when you in those street food areas, avoid anything that looks 'unique'. chinese love to do gimmicks to get people to try so the more odd and interesting something looks, the more likely tourists will likely try it. more often than not, it's not authentic and might not even be good. just stick to stuff you would normally eat and like - nothing wrong with that. same goes with how you should eat in china, no rules. just eat how you enjoy something. I always see brits try to be proper and fumble baos with chopsticks instead of just using their hands 😂. so while most people would sip the broth separately, if you like soupy noodles go for it lol

The CCP won the Civil War because it didn't fight the Japanese. Instead, it colluded with Japan during the war and supplied information to the Japanese army so that the KMT and the Japanese could fight each other. Once the war ended, the KMT was greatly exhausted, having lost many men, while the CCP was quietly expanding during this time. Most people know that the CCP's strategy of the time was to have the KMT and Japan fight each other (七分發展兩分應付一分抗日). But it is actually more than that. The CCP actively colluded with Japan. Some CCP members were given passes and protection when traveling to Japanese-controlled areas during that time.
