Congrats on the job. My friend started out doing just this. Word of mouth kicked in... Ended up having a very successful catering business -good enough to retire comfortably. Converted his basement into a commercial kitchen, had a huge walk-in freezer in a shed.

Thats alot of food, congrats... how did you handle keeping it food safe after the cook and serving?

I cooked all the food the day before and refrigerated everything. The next morning I reheated some of the food and transported the rest it to the location. I was also able to reheat some food up to serving temp in the oven at the location the rest I also brought an electric 22 qt turkey roaster to reheat food and immediately added it the chafing dishes
