ഇഞ്ചി വൈൻ | Ginger Wine Recipe Malayalam| Instant Wine Recipe| Homemade Ginger Wine Within 1 Day |Mary's Treat| Ep #31
Hi All,
I hope all of you are doing good. Today I am demonstrating how we can make ginger wine instantly at home. It only takes less than a day for the complete process. We will finish straining it in that time. I suggest you to keep this refrigerated since we made it easily rather than the traditional method. It tastes as same as the authentic wine and the lemon, chillies and sugar makes it taste awesome 🥰🥰😋.
Try this atleast once or when you crave for a homemade wine and don't want to wait so long🤗🤗..
The video is in malayalam. Listing the ingredients below. Do try and wish you all happy cooking.
Ingredients
#########
Ginger 500gm
Water (for grinding ginger) 250ml or 1 cup
Sugar(for caramelizing) 6 tbsp
Water(for caramel syrup) 250 ml
Dried red chillies 10
Cardamom 15
Cloves 12
Cinnamon sticks 3 big pieces
Water 1.5 litres
Sugar 2 cups
Lemon 4 big(1/2 cup extract)
Preparation Method
###############
1. Peel, clean and chop the ginger and coarse grind the ginger with the amount of water specified for grinding.
2. Strain and keep aside for a few minutes, undisturbed.
3. Caramelize the 6tbsp sugar and once done add 1 cup water.
4. When the caramelized sugar is completely melted, add the spices.
5. Add 1.5 litres of water.
6. Add 2 cups of sugar.
7. Stir well and make it to boil from all the sides, then add the strained ginger juice slowly, without disturbing the bottom. Discard the sediments.
8. Keep in low to medium flame and boil for about 20 minutes.
9. Switch off the flame and bring it down to room temperature.
10. Strain the mixture and add the lemon juice , stir well.
11. Keep this undisturbed for about 5-6 hours and strain it to bottles without disturbing the bottom.
12. Keep in the refrigerator since this wine is not fermented and may spoil easily on room temperature. If you want it to store like a normal wine in room temperature add 1 teaspoon of yeast and strain only after 10 days stirring occasionally.
Notes**
1. 1 cup is 250ml
2. Tbsp is tablespoon
3.You can adjust the spices and sugar as per your taste buds. I used chilly with less spice level.
4. You can completely avoid the caramelizing step if you don't want this color. You will retain a whitish wine.

Thanks a lot for your comment 😍. Its actually stainless steel cookware and the brand name is sofram. My mom usually make nellikka arishtam in 41 days since it's made with whole raw gooseberries. It takes time to get done. But you can chop it and make the arishtam which makes the process easier, may be 21 days🙌🙌❤

Hw long v can store if v add yeast then v can keep out side store for longer then it becomes strong na very nice

Thanks for the comment 😍😍in that case its just like normal wine..add only a teaspoon of yeast to this much of ginger. Dont close the bottle completely, dont shake same as we do for normal wine👍👍

Thanks for the comment 😊. Keep in the refrigerator since this wine is not fermented and may spoil easily on room temperature. If you want it to store like a normal wine for years in room temperature add 1 teaspoon of yeast and strain only after 10 days stirring in alternate days. In that case reduce the number of chillies.

Sorry that it didn't came out well..may be because of the difference in flavours..You can add a teaspoon of yeast and ferment it as the normal wine👍

Dont grind the ginger, grate it instead and don't even add cardamom. Rest all good.

@Lavina Lewis strain with a cloth, bottle it and keep it for few months without disturbing..all the residue will settle and u will get clear golden wine! Hope it helps💕

I used to prepare this wine. Got the recepie from one of my friends who is an Anglo Indian. Only one difference in the preparation. Instead of grinding the ginger, Cush it nicely. Add all ingredients together, then add six times of water and bring it to one third portion. Rest all same. It is a very good wine after a heavy lunch

Hi, thanks a lot for this recipe, tried it yesterday by halving the quantities. Also used kashmiri chillies as i didn't have regular chillies available with me. The wine is darker in colour ( could be the redness from the chillies) and also not transparent, as your video shows. Any idea why? Also, the taste is quite gingery, so can't drink more than a couple of sips..how can I reduce the gingery, taste?

Thank you🙂 Glad that you liked it. The redness can be from the chillies. The ginger that you used may be pungent and try adding some more lemon juice and sugar and if it persists add some boiled and cooled water for diluting 🙂🙂🙂

It can be added to the cooled mixture and you don't need to strain it in that case. Keep it covered in a glass jar for 10 days stirring occasionally. Afterwards strain and keep it in glass bottles as any normal wine. When we are keeping this for fermentation, you can reduce the number of chillies to half the quantity 😍. How many days can we store this wine outside.?

It should be stored in the fridge since we are not fermenting this. If you want to keep it outside as for the normal wine, do add 1 teaspoon of yeast before straining and keep it for 10 days stirring occasionally. Strain it afterwards and store like we do for a normal wine. Thank you for the comment 😍🙂

But I read another blog on ginger wine n there it says that only 4 day's is enough for the wine to be fermented, but herein u say that the time required is10 days??? Any suggestions ma'am?

FAQ:- We have to keep this in the refrigerator since its not fermented wine... we are making it instantly. Other option is, you can add one teaspoon of yeast before straining and kept covered for 10 days, stirring on alternate days. Then it will be like normal wine and can be stored in room temperature. in that case, reduce the number of chillies.🤩🤩 This drink may not suit for sugar patients since we are not fermenting it👍.
