Pro tip , add some dry fenugreek leaves in the end , that’s the secret to that restaurant flavor (parsley isn’t an Indian ingredient coriander would have been better as a garnish )

In the uk you can buy fresh chopped frozen fenugreek leave, if you can get them I would highly recommend you try them. Far superior flavour to dried

In my opinion and I am confident that I am not the only Indian with this thought, that butter chicken is best with roti (soft tortilla) instead of rice but for that the gravy needs to be thicker which can be obtained by not straining the gravy. And parsley shouldn't be used as garnish and preferably fenugreek should be used and if not that coriander is good enough

I agree. I know Genshin and Guga like to do it with rice which is totally ok but I always have butter chicken with a nice hot Tandoori (Naan) 🫓

A critic critiques food as well, not just compliments every thing he chews on.... But apparently every thing Guga makes is the best thing he's ever had in his life. I get they're part of the same operation here but it gets stale over the years. You tend to tune out when Leo talks nowadays. He also basically just repeats what ingrendients were used and says some obvious, general, fact about that ingredient. I find it's a lot of talking for absolutely nothing but that's my opinion.

I think the best part of chicken is it's versatility. It has a nice, mild flavor that lends well to sauce or seasoning. Meaning you can realistically do whatever you want to it with confidence that it'll still be good. Chicken being one of the more beginner friendly proteins to cook helps a lot too.

This episode is a pleasant surprise! I love butter chicken, and appreciate seeing this recipe. The idea of butter beef is something which never would have occurred to me. However, seeing a Guga version of one of my favorite dishes does bring to mind the question, what would he do with another favorite of mine: Osaka-style okonomiyaki? Okonomiyaki, which is sometimes called Japanese pancakes or Japanese pizza, is IMAO a dish that needs more attention overall (well, outside of Japan itself, I suppose), and could definitely use a good Guga twist. One of the fun parts about these savory pancakes is how versatile it can be - the name 'okonomi-yaki' means something along the lines of 'whatever you like, fried'. While there are traditional ingredients for it, in practice it should be amenable to just about anything, either mixed into the batter or topping the pancake. I would definitely like to see what Guga does with that dish, and also what he would do with the related but distinctively different Hiroshima style okonomiyaki, which replaces the thicker cakes with the ingredients mixed into the batter, with a more crepe-like batter and layers of ingredients. While it is not a typical topic for a Guga video, it would be a worthy challenge to see what he could come up with. However, given the channel, I suppose it would make more sense to mention sukiyaki, which as I understand it is the oldest Japanese beef dish. Perhaps combining the two somehow would be appropriate?

Since Indomie is one of the best instant noodle out there, try dry-aging a steak with all of the seasoning packet but you'll gonna need a lot of it.

I agree, Indomie and Shin Ramyun are my favorite instant noodle brands. Dry-aging a steak with Indomie seasoning packets indeed sounds intriguing. You are also correct he would need a lot of packets. It would not surprise me if he needed at least 10 packets, depending on the meat cut.

Butter chicken was named for being butter smooth, not for actually having butter. Traditionally we would fry the onions and spices in ghee instead to start.

Guga should grill the chicken before adding it to the gravy. Traditional butter chicken is made from left over tandoori chicken. To bring the smokey flavor the gravy is also smoked in a Dhungari. If Guga had that style of butter chicken he will come out with Guga butter chicken version 2

Sir kashmiree Chilli is not for flavour its for colour, it will not give any flavor to steak because kashmiree cilli is not spicy at all, it is famous for its deep red colour. We Indians use kashmiree powder as a natural and healthy substitute for food colour.

Kashmiri Chilli is used for its color. For those used to Spicy foods its nothing but keep in mind in the states the #1 hotsauce is sriracha and kashmmiri is hotter than siracha. Also the quality of Kashmiri definetely varies. A lot of the stuff in the states is a blend. You don't exactly have a wide selection to choose from either. The kashmiri I have currently have I have to use about 3-4x the quantity to reach my desired spice level compared to cayenne(my cayenne is particularly old to note) And yes I use Kashmiri for spice as well as color. I love spicy food but my body does not if you know what i mean.

Man I'm from Brazil, Guga too, my state is the only one known for eating pepper. Generally, the places where we eat pepper are in the northeast and north of Brazil. But the only state known for eating pepper is my state, Bahia. I've seen cooking videos from people from the south/southeast of Brazil, saying that if you're weak to spicy so don't use black pepper or cumin powder. LOL The rest of Brazil it's a joke when it comes to pepper.

Here's what I love about videos like this: it deviates from the original recipe. And I often do the same to recipes I see on here. For example, I don't like anything spicy and I'm (highly unfortunately) allergic to cashews, but I could see tinkering with this recipe to remove the chili powder and some of the ginger paste and replace it with something that I prefer and am not allergic to, like smoked paprika and pistachios.

Any white nuts would work well in butter chicken. Peeled almonds is a traditional choice as well. If almonds are dunked in boiling water for a few seconds, the skin comes off effortlessly if you pinch the almond. Sometimes you can find them already blanched/peeled in the US at least. Pine nuts are also a traditional acceptable choice, but are very costly. Macadamia nuts, hazel nuts, or Brazil nuts if you scrape the brown skin off will all work well. The main point is mostly about color. Pistachios are green and would add a very odd color to the curry. Brown skin on almonds or Brazil nuts would also color the curry. The Kashmiri red chilli powder (Deggi Mirch) is actually extremely mild and used mostly just for color. They were bred to be intensely red for use as a natural food coloring. It's very similar to Paprika. My family were Afghan refugees who escaped to India and now live in the US. I've lived in India for several years. In both Afghanistan and India, most people do not have modern western luxuries like refrigerators, ovens, stoves, etc. Now gas stoves are growing slightly in popularity as they're being pushed for environmental/pollution control. In Afghanistan we would kill the chicken in our back yard and use it fresh. In India the Hindus are religiously averse to killing animals for meat, and poverty also means that people often can't afford the whole chicken. We also ate most birds we could get our hands on except crows and vultures. Pigeons were especially popular. So the chicken will often never be chilled or refrigerated which means it gets stinky. In Arabic they have a word "Zankha" that's even used in the Quran to describe this odor. Washing it and using ginger/garlic on the chicken helps tremendously with this odor. It's also believed ginger/garlic are antibiotic and improve the safety with the chicken. This is standard practice in India for almost all chicken recipes. In India and in Indian stores in the US, you can find large jars of "Ginger garlic paste" which is applied fairly liberally to chicken. In the western world, the chicken is typically dipped in vats of ice water after slaughter to immediately chill and wash it. As a result our chicken is pre-washed in America and usually has a disclaimer about water retention. Air chilled chicken is a new thing using high powered refrigerators instead. India also has a significant religious sect called Jains which are super vegetarians and will avoid eating root vegetables like onions, garlic, and ginger out of a fear of killing insects when digging them out of the ground. As a result these ingredients are not strictly necessary for an authentic Indian flavor. Even the Chili pepper originated in the Americas and Christopher Columbus brought it to the rest of the world.

As always phenomenal video and even more phenomenal recipe twist!!!!!! Here are some levels you can push this dish to...... 1. Smoked steak butter (chicken) 2. Dry aged steak butter (chicken) 3. Wagyu steak butter (chicken) The first time my wife made this dish last year I smoked the chicken first. Only because I saw you smoking steak over the last 5 years. Guga you must cook the chicken in your charcoal grill. Usually in Authentic Butter Chicken they cook the chicken in a tandoor owen. It will give that smoky flavour also you don't add vinegar you must also add Coriander powder, Cumin power it's an important ingredient in making butter chicken.

Mistake no1- Use grilled chicken with charred bits or atleast smoke that gravy. Mistake no2- strain that gravy/sauce to make the texture silky, otherwise its not butter chicken. Mistake no3- use Kasuri methi crush at the very last minute. Do these and your butter chicken will be TRANSFORMED. - An Indian Home chef. Umm. Also, Hindu people dont eat beef due to religious reasons. Its an sacred animal for us. P.S- A few handful from 1Billion Hindus eat beef just like a few muslims devour pork too. But they dont form the core belief system for the majority conventional others.

Wow! The timing of this was a trip! I was just watching Bizarre Foods and Andrew was at a place in Delhi, India having butter chicken. This video popped up on my KZbin notifications. I tuned into this here ans also changed the channel in my TV. The channel I tuned the TV to was showing Chopped and at least one of the contestants was cooking Chicken Tikka Masala.
