RECIPE (4 servings, 30min prep time): -1 onion -1 chili -a thumbsize piece of ginger -3 cloves garlic Blend into a paste. Fry in enough oil 3-4mins -2 Tbsp tomato paste -2 Tsp curry powder -salt to taste -1 can (400ml) coconut milk -3 1/4 cup (800ml) water Stir and let it simmer 5-10mins -400g tofu, pat dried -3 Tbsp each desiccated coconut and corn starch -salt to taste Shake and fry in oil until crispy -250g rice noodles Place them in the hot broth. Wait 3-4mins until they’re cooked. Serve with tofu and veggies of your choice.

Finally a recipe I can make and not die eating ;-; It looks so good I'll need to make it soon. I'm allergic to a bunch of stuff and I'll end up more heavily cooking the paste due to being allergic to remotely raw onion.

suggestions: 1. after adding oil to the pan (on a med-low heat), add the curry powder and cook the powder in the oil for about 30 seconds or so. THEN add the veggie paste. the curry will be much more intense and flavorful. 2. if you want the tofu to take on a more meatlike texture, prep it first by tearing them up into chunks -- and then FREEZING them. when you thaw them, they turn out more stringy and take on a chicken-like texture. (dunno how or why it does this, but there you go) 3. for a slight -- but delicious! -- change of flavour, add peanut butter and/or ssamjang. 👍🏼

Malaysian inspired food. Looks delicious. There is another version where they add mashed orange sweet potatoes to thicken the gravy. It's called mee rebus. It's one of my favourite noodle soups.

I thought it looks like Malaysian curry mee. Minus the meat. I would have added some spices like star anise, Cinnamon stick, fennel seeds and cumin seeds to flavour the curry.

Looks amazing! And I always have desiccated coconut in I've never thought to roll my tofu cubes in it!!! Funnily enough I've just done some tofu cubes in my air fryer but in a more Mediterranean way with mixed herbs and rosemary. Just killing time on here while I wait for my rice to finish cooking 😊❤

Have you ever tried Vegan Kare-Kare? I enjoyed it a lot on my trip to La Union, Philippines. It's a peanut sauce thickened with roasted rice flour. And then a plethora of veggies like aubergines and bok choy and green beans, as well as banana heart is served. Instead of the traditional shrimp paste, the vegan restaurant used fermented black bean paste! And to me it tasted like a pretty good alternative. I had mine with tofu, but any mock meat would do well, and I imagine your chickpea "chicken" shreds would work nicely in the peanut sauce.

Hello Maia, love your recipe! It looks very similar to Laksa, which has a more aromatic gravy, and uses spaghetti-thick rice noodles. Of course, there are few differences, but I won't go into those here. Usually I add the dessicated coconut to the initial paste. It's pretty dry already, so it needs the grinding to help release some of the oil. Cooking the paste out brings out more of the oil, so when you add the milk, the flavour is enhanced. You can also pan-roast the dessicated coconut until it colours, then use a little of the same paste and spice powders until you have a really dry, crumbly roasted dessicated coconut topping. Trust me, the dessicated coconut and flour are wasted on the tofu. I'd coat the tofu cubes in an oil-based marinade and roast in the oven for 10-15 minutes, or until crispy. I'd add a bunch of veggies to cook in the paste after cooking it out - carrots, cabbage, fine French beans etc, but use water or vegetable stock, and then add a splash of coconut milk about 10 minutes from serving. I'd cook the rice vermicelli separately, so that the resulting rice starch doesn't add to the gravy and over-thicken it. Angel hair spaghetti is a great alternative, as are soy flour based noodles. Just don't use glass noodles, ie, made from sweet potato flour. Put your noodles in a bowl, add the veggies, ladle in some of the gravy, top with the tofu and sprinkle some of the spiced roasted coconut. Aaand slurrrp it down. Ommm-nom-nom-nom-nom!

2 things: 1) add the lemon after you turned off the fire, there will be no use adding while it's still simmering. 2) she cooked her noodles in the broth since it's glass noodles, but if you have any thicker noods, then cook it 50% normally and let it cook rest in the broth. That way the noods will be fine and will still retain some of the broth flavor.

Nice video, one suggestion is to not add the garlic in the same time as ginger and the chilli as you will lose a lot of the garlic flavour and maybe even get a "bad garlic" flavour from roasting it too much. I suggest adding your spices in the oil, then adding ginger and chilli and depends how thin you cut the garlic: -If made in a garlic paste you should add the garlic just for a short amount of time If cut in bigger chunks you can add the garlic as soon as you start to smell the aroma of the ginger and chilli.
